Asparagus Mushroom Burrata Pizza

This asparagus mushroom burrata pizza cooks up in less than 20 minutes and is the perfect spring pizza. Topped with lots of sauteed mushrooms, asparagus, sun-dried tomatoes, mozzarella cheese, burrata cheese and sprinkled with red pepper flakes and micro greens. You’ll LOVE this pie!

It’s PIZZZZZZZZZZZA time! You know I’m all about making pizza and looking through my archives has me all “ummmm maybe I make too much pizza?” But then I realized there is no such thing “too much pizza” and I immediately shut my dirty lying mouth.

Yeah, I’m pretty tough on myself. BUT this is about pizza and I should never not make pizza. Especially when this pizza is topped with mushrooms, asparagus, sun-dried tomatoes, mozzarella, burrata and micro greens. Also, have we talked about my obsession with New Girl? I used to be obsessed with this show when it first started but then we cut cable and I gave up on all the shows I watched when I was foolishly paying for cable. I say “foolishly paying for cable” when really it was fine but I was just annoyed at all those high prices when really the only thing I watched was Mad Men, New Girl, Toddlers in Tiaras, The People’s Court and Judge Judy. For real, that was my DVR list. Sadly the shows I miss the most are The People’s Court and Judge Judy #yolo

I would watch court tv all the time if acceptable. For real – what’s not the love?

Ok, but back to New Girl. I finally caved at got Hulu so now I can start watching it again! I have flown through 5 seasons and now I’m on season 6.I love it so much. It makes me want to pack all my things, move to LA, get a loft and live with a bunch of deranged hooligans.

I feel like I should have more to say about why I love this show but I’m hopped up on Benadryl so all I got is – WATCH THE SHOW! I swear, it’s really great.

Oh man. This post was a cluster. If someone were happening to read it out loud it would sound like a disaster of a human wrote this post. Which is half true so really I’m just keeping it real.

Asparagus Mushroom Burrata Pizza

This asparagus mushroom burrata pizza cooks up in less than 20 minutes and is the perfect spring pizza. Topped with lots of sauteed mushrooms, asparagus, sun-dried tomatoes, mozzarella cheese, burrata cheese and sprinkled with red pepper flakes and micro greens. You'll LOVE this pie!

Yield: 1 pizza

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1 pound pizza dough, room temperature
  • 3 tablespoons olive oil, divided
  • 1 cup thinly sliced portabella mushrooms
  • 10 skinny asparagus spears, woody ends trimmed off and cut into 2 inch long pieces
  • 1/3 cup chopped sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1-1/2 cups shredded mozzarella cheese
  • 1 ball Burrata cheese
  • Red pepper flakes
  • 2 cups micro greens

Directions:

Preheat oven to 425 degrees and prepare a baking sheet with a non-stick liner.

Spread out dough onto the liner and set aside.

Spread out dough onto the liner, brush with 1 tablespoon olive oil and set aside.

In a large skillet add 2 tablespoons olive oil and set over medium heat. When the oil is hot add in the mushrooms and saute for a few minutes until they start to soften.

Add in the asparagus spears, sun-dried tomatoes, and garlic. Saute for another 5 minutes just until everything is soft and the garlic is fragrant. Remove from the heat.

On your stretched out dough use remaining tablespoon of olive oil to spread across the dough.

Top with 1 cup mozzarella cheese and all the sauteed vegetables. Drain your burrata cheeseball and break into lumps and scatter across the pizza. Top with remaining 1/2 cup cheese and sprinkle with a little red pepper flakes.

Bake for about 20 minutes or until the dough is fully cooked and the top is lightly brown.

Remove from the oven and sprinkle with the desired amount of micro greens.
