Coffee cake is my weakness. I swear I can sit down to have one slice and in a blink of an eye half of the cake is gone. Ok, I gotta stop with the hashtagging in my posts – sorry. BUT back to this very special fall cake. It’s amazing y’all. I mean, I’m not even southern and I’m over here shouting y’all!
Soooooooo first I started with a box spice cake mix. I KNOW! You stop judging me RIGHT NOW! I like boxed cake mix and to be perfectly honest it works hella awesome in this recipe! Plus it makes throwing together this recipe a breeze. Also, I have a weak spot in my heart for spice cake so I pretty much never turn down a chance to make it. Only this time I took that love and gave it a little autumnal jazz. <– autumnal jazz – that’s a thing, right?
Alright, after preparing the cake I covered the top in fresh apples and buttery crumble topping and baked until golden brown and delicious. The apples gave it that delicious fall flavor and the crumble topping was a super bad ass way of turning this cake into a coffee cake. Ok, confession time. I’m not really sure what makes a coffee cake a coffee cake but I’m going to assume it’s an awesome topping.

Apple Pie Coffee Cake
This spiced apple pie coffee cake is the perfect addition to your fall dessert menu. Fresh apples baked into a spice cake and topped with a buttery crumble topping. You'll love how easy this dessert is to make and your whole family will be begging for a slice.

Ingredients:
For cake:
- 1 box spice cake
- 4 medium apples, peeled, cored and thinly sliced
- 1/4 cup brown sugar
- 1 teaspoon apple pie spice
For topping:
- 1-1/3 cup all purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 teaspoon apple pie spice
Directions:
For cake:
Preheat oven to 350 degrees and spray a 9x13 dish with non-stick spray.
Prepare spice cake according to box directions and add to the prepared 9x13 dish.
In a medium bowl mix together sliced apples, brown sugar and apple pie spice. Toss to combine.
Add apples to the top of the uncooked cake batter. Make sure to evenly distribute the apples.
Take the crumble topping and crumble over the top of the top of the cake. You'll notice it likes to clump together to leave some bigger clumps but make sure to get an even amount of topping all over the cake.
Bake for about 35 minutes or until the whole cake is fully cooked. Because this recipe uses fresh apples it makes the whole cake very moist so it will take a bit longer to full cook than a normal cake.
Let it cool and serve with a sprinkling of powdered sugar if desired.
For topping:
Add all ingredients and mix together until crumbly, set aside.
