It’s apple time! I know everyone is still in a pumpkin haze but throw me an apple or two – ok?

The thing I love about apple pie is that I have yet to meet a person who truly hates it.

I know, as soon as I say this I’m going to get a bunch of comments about how you all hate apple pie BUT it seems to pretty a pretty solid contender as a crowd-pleaser in my family.

Of course, the one thing I don’t like about making pie is always having to make the pastry.

Yes, I know it’s easy BUT sometimes I just don’t want to.

There is no reason other than that I’m lazy #truth.

That’s where my true love Athens Foods comes into play.

They make these adorable Athens Mini Fillo Shells that are seriously the biggest help in the kitchen.

I have used them for everything from appetizers (seriously, these sausage spinach mushroom phyllo bites are the BOMB! ) to delicious no-bake desserts (try my chocolate drizzled pecan pie bites) And now I’m back at it with the dessert game! As I stated I have mad love for all things apple and even more so when those apples are paired with brown sugar, apple cider, and vanilla bean paste!

If you have never used vanilla bean paste before I BEG you to pick up a bottle.

It’s like vanilla extract but 1000% times better. Plus you get to see all those pretty little vanilla bean flecks in your finished product.

I struggled with what to top my vanilla bean apple pie phyllo bites with but in the end, I went with whipped cream.

You get so much crunch from the Athens Mini Fillo Shells I didn’t want to overshine that with a more crunchy topping.

PLUS everyone loves whipped cream – am I right?

I also happen to think a few tiny scoops of ice cream on top would be beyond delicious.

You know, since ice cream and apple pie are basically BFFs.

Ingredients 

  • 30 Athens Mini Fillo Shells
  • 4 cups small diced apples
  • 1 cup apple cider
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla bean paste
  • 2 teaspoons apple pie spice
  • 1/4 teaspoon kosher salt
  • Whipped cream, for topping

Instructions 

  • Lay out Athens Mini Fillo Shells onto a tray and set them aside.
  • In a 12-inch skillet add apples, apple cider, brown sugar, vanilla bean paste, apple pie spice, and kosher salt.
  • Cook over medium heat until the cider has cooked down and the apples are soft.
  • If the apples are not soft enough when the mixture cooks down add a bit more cider and continue cooking until desired texture has been achieved.
  • Add apple pie mixture to the Athens Mini Fillo Shells and top with whipped cream if desired.

  4. Can these be made ahead of time? Looking to make them for a party and curious what the best way to prepare them would be.

    1. Hi Michelle – I would make the filling and fill shortly before serving. While the phyllo shell does stay crunchy longer than some pastry I’m not sure how long they would hold up if you made them a day in advance. If you’re making them early in the day to serve that evening you can just make them and store at room temperature. Before serving you can top with a dollop of whipped cream if you desire.
