Shrimp Feta Pasta

This shrimp feta pasta is a flavor-packed weeknight or special occasion meal. Garlicky shrimp mixed with a feta sherry tomato sauce served over perfectly cooked pasta – what’s not to love? 

My husband grew up eating this meal, his all-time favorite.

Whenever I make this pasta with shrimp and feta, he devours two giant plates and sits in his chair so full he can barely move.

While I’m not a fan of overeating, it’s easy to do with this dish. You guys – it’s so damn good.

It starts with a simple sauce of crushed tomatoes, Italian herbs, dry sherry, parsley, onions, and feta cheese.

THEN you cook up some shrimp in butter and garlic and throw it all together. It’s pasta heaven.

There is some simmering that needs to be done with this dish, but for the most part, it’s pretty hands-off which makes it an acceptable weekday and weekend meal.

PLUS, the smells that come from this dish are so irresistible you’ll want to make it all. the. time.

PLUS, who doesn’t love feta cheese and shrimp? It’s so good.

I like to serve this sauce over al dente linguine, but any pasta will do.

I think it’s fun to twist my pasta so I’m a fan of stringy pasta.

Also, confession.

When I’m lazy about my pasta twirling, I just cut it all up and shovel it into my mouth. I’m the most un-Italian person on earth.

Oh, and make this dish easier on yourself by buying shrimp already cleaned and deveined.

One of my least favorite tasks is cleaning shrimp.

It’s gross, time-consuming, and just a hassle. I want to get into the kitchen and make dinner without much work.

Ingredients

  • 8 tablespoons unsalted butter divided
  • 2 cups diced onion
  • 3/4 cup chopped parsley
  • 1 (28 ounce) can crushed tomatoes
  • 2 teaspoons Italian spice blend
  • 1/2 teaspoons Kosher salt
  • 1/4 teaspoon crushed red pepper
  • 3/4 cup dry sherry
  • 1 cup crumbled feta cheese divided
  • 4 cloves garlic minced
  • 2 pounds medium raw shrimp cleaned, deveined and shelled
  • 1 pound cooked linguine

Instructions

  • In a large skillet set over medium heat add 4 tablespoons unsalted butter.
  • When the butter is melted add the diced onion and parsley. Cook for about 5 minutes or until the onions are translucent.
  • Add the tomatoes, Italian spice blend, crushed red pepper, and kosher salt. Lower the heat and let simmer for 20 minutes.
  • Add the sherry and simmer for another 10 minutes. After 10 minutes stir in 3/4 cup feta cheese and keep warm while you prepare the shrimp.
  • In another large pan set over medium heat add the remaining 4 tablespoons butter. When the butter is melted add the minced garlic and shrimp. Cook just until the shrimp is pink and combine the shrimp, butter, and garlic to the sauce. Stir to combine.
  • Serve the sauce over cooked pasta and garnish with remaining feta cheese.
