Last weekend I went and seen The Fault in Our Stars.

Good lord. Major cry fest.

I’m all for sad movies. I’m all for romance movies that end in something tragic {Hello Nicholas Sparks!} but I’m never emotionally prepared. It’s like every bad thought I have ever had just comes to the surface and I’m the girl sitting in the movie theater openly weeping.

Weeping, people. Weeping.

Luckily there were also quite a few 13 year old girls crying along side of me. But still, when your 32 and having an emotional breakdown in a theater it just feels out of place. I almost wonder if the 13 year olds are thinking “Geez look at that old lady. She needs to get her shit together.”

So what does a girl do when she is emotional drained? Well, I can tell you what she doesn’t do – cook something complicated.

After a good cry {women, you know what I’m talking about!} I’m usually tired but starving at the same time. Since my personal chef has yet to move in {dreams…} I’m forced to whip up something for myself. This pasta dish is one of those dishes that is hearty, filling and fast to make. Plus I usually have everything on hand.

I thought about calling this dish “one pot” but really you need two pots since you gotta cook the pasta. So really cleanup is two pots. That’s it. Plus you get a dish that is packed full of sausage, kale, tomatoes, garlic and basil. Fresh basil in the summer is the best thing ever.

If only I could grow the stuff without it dying on me. I swear my thumb is black.

Italian Sausage and Kale Pasta

This Italian sausage and kale pasta is packed full of onion, tomato, kale, sausage and basil. It's the perfect weeknight dish and ready in just 30 minutes.

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 pound pasta
  • Kosher salt, to taste
  • 1/2 cup shredded Parmesan cheese, divided
  • 1 pound ground Italian sausage, spicy or sweet
  • 2 tablespoons olive oil, more will be needed later
  • 1 small yellow onion, diced
  • 1 cup halved cherry tomatoes
  • 2 cups chopped kale
  • 3 cloves garlic, minced
  • 1/3 cup minced fresh basil

Directions:

Fill a large pot with water and set over high heat. Once the water is boiling add in a heavy pinch of kosher salt and pour in pasta.

Cook the pasta according to box directions, drain, add back to the pot, drizzle with a little olive oil and stir in 1/4 cup Parmesan cheese. Set aside until you are ready to combine with the meat mixture.

While the pasta is cooking start making your sausage mixture.

In a large skillet add Italian sausage and cook until no longer pink.

Add 2 tablespoons olive oil to the sausage pan and add in onions and tomatoes. Sauté for a few minutes until the onion and tomato starts to soften.

Add in kale and sauté until the kale is soft. Add garlic to the pan and cook for 30 seconds until the garlic is fragrant.

Pour in pasta and stir to combine. If the mixture is dry drizzle on a little more olive oil and stir in basil. Sprinkle the top with remaining Parmesan cheese and serve hot.

    I’ve seen vodka sauces at the grocery store, but never eaten anything with a vodka sauce. But wine works in sauces, so why not? And your homemade version (I bet) would bet any premade bottled sauce. I love that you made it spicy – it sounds delectable!

    How about this vodka sauce? I love vodka sauce too (probably my favorite pasta sauce) but I’ve never made it myself, and I’m sure homemade is infinitly better than jarred! Either that or soup, which I love love love. Any soup really, but a thick carrot soup would be really nice.

    Oh wow that looks amazing! To be honest, I’d love to make a chili! My pans don’t allow me to brown the meat, saute veggie and/or simmer it all together without burning it or having it all be a mushy mess. Oh, and pan searing my meats, what a dream! lol
