This post looks amazing and it’s such a great way to use up leftover pound cake. Not that that that would ever happen around here.

For those of you that don’t know me, about three months ago my husband and I got married on the beautiful island of Aruba.  We had an amazing time, and we are still on a complete high from the experience!  We absolutely cannot stop talking about it!

Practically every minute I’m talking about our wonderfully supportive friends and family who came down to be with us.  Or the beautiful private island where our ceremony was held. Or the most fun party EVER that we wished would never end.

And you know what my husband is talking about?  The dessert that we had one evening on our honeymoon.

Literally, he has not stopped talking about this dessert since we got home.  And you know what?  I don’t blame him.  It was that good.

(I mean, not as good as all that other, wedding stuff, of course.  But you know, as far as desserts go.  It was definitely very, very good.)

So I decided it was time to recreate this infamous dessert once and for all.  And this Ice Cream Social was the perfect opportunity to share it.

It’s really not hard at all, actually.  You just need a few simple ingredients.  But put those simple ingredients together into one dish?  Magic.  I’m serious.  Delicious pound cake parfait sundae magic.

Pound Cake Parfait Sundae

This pound cake parfait sundae is the perfect use for leftover pound cake. Buttery pound cake layered with vanilla ice cream and hot fudge - what's not to love?!

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 1-quart vanilla ice cream
  • 4 slices pound cake of your choice
  • 1 cup chocolate chips
  • 3 tablespoons butter
  • Splash half and half or heavy cream

Directions:

Using a sharp knife, prepare the pound cake by cutting it into small cubes, just larger than playing dice. Set aside.

Remove the ice cream from the freezer and allow it to soften slightly so that it is more easily scoop-able.

In a small microwavable bowl, combine the chocolate chips and butter. Microwave on 50% power for 2 minutes. Stir well. Continue to microwave at half power in 30-second intervals, until just melted.

Add a splash of half and half to thin the mixture out slightly, and stir well.

Working quickly so that the chocolate doesn’t harden, assemble the sundae.

Layer the pound cake into the bottom of four clear sundae dishes. (Taller dishes work better, as you can make multiple layers and get a real “parfait” feel. I only had short ones, so I just made one layer of each ingredient. Still delicious.)

Top the pound cake layer with a scoop of ice cream. Repeat with the second layer of each if your dish allows.

Top the final scoop of ice cream with a healthy drizzle of the chocolate topping. Serve immediately and enjoy!
