Every other week I have a love affair with a different type of food or drink. This week? Jameson. Good lord I cannot get enough. My husband and  I have been drinking classic Irish coffee almost every single night and have going through Jameson like it’s our job.

It doesn’t help that I keep snatching it out of our bar and throwing it in whipped cream and caramel.

I’m helpless.

Oh, but before I get too far into this post we need to talk about The Bachelor. I know it’s horrible reality and I know it’s totally non-realistic BUT I love it. If the only bad thing I can say about my life is that I sometimes enjoy watching trashy reality shows, I think I’m doing fine. As most of you may know I live tweet the Bachelor and Bachelorette every single season. This year I was super excited to see JuPa as the new Bachelor. Last season he was just this quiet guy who has a shy smile and hot abs. Then this season rolled around and he started talking. What. An. Asshat.

I was honestly not fan of either Nikki or Clare. However, both of these ladies saw red flags popping up in every direction and opted to ignore them. Basically behaving like a crazy Lifetime movie character. Listen, if you can’t be happy with the dude on a dating show {where it’s your only job to actually go on dates!} then there is an issue. If he is an ass to you TV he is going to be a real handful when the cameras go away. You’re going to be miserable and he is going to be sitting around with a dream he can be on Dancing with the Stars.

Ok, thank you for letting me vent about my beloved Bachelor. I promise to stop talking about crazy reality TV until the Bachelorette comes back on in May.

Well, I guess I should tell you a little more about these cupcakes. They are light and fluffy of full of beer flavor. I used a lovely chocolate stout but you could easily substitute Guinness if you want. Make sure you make the whiskey buttercream because it brings just the right amount of boozy flavor. Plus it pairs perfectly with the stout cupcake. I also drizzled a few cupcakes with chocolate sauce because everything is better with a drizzle of chocolate…right?

Stout Cupcakes with Whiskey Buttercream

These stout cupcakes with whiskey buttercream of fluffy, moist and full of boozy flavor. They are perfect for St. Patrick's Day but are delicious all year long.

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Ingredients:

For cake:

  • 1 cup white whole wheat flour
  • 1-1/2 cup all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1-1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon espresso powder
  • 12 ounces chocolate stout beer, room temperature
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla bean paste
  • 3 large eggs, room temperature
  • 3/4 cup full fat plain Greek yogurt

For frosting:

  • 1 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 2 tablespoons Irish whiskey
  • 1/2 teaspoon vanilla bean paste
  • Pinch of kosher salt

Directions:

For cake:
Preheat oven to 350 degrees and line 2 cupcake trays with paper cupcake liners, set aside.

In a medium sized mixed bowl add both flours, sugar, cocoa powder, baking soda, kosher salt and espresso powder, set aside.

In a large mixing bowl whisk together beer, milk, vegetable, vanilla bean paste, eggs and Greek yogurt.

In a few batches stir in the flour mixture until completely combined.

Fill each cupcake liner a little more than 1/2 full and bake for about 20 minutes until a toothpick inserted in the middle comes out clean.

Let the cupcakes cool and then frost.

For frosting:
In a bowl of an electric mixer add butter. Mix on medium high speed till creamy.

While the mixer is running slowly add the powdered sugar, one cup at a time.

Once all the powdered sugar is incorporate add in Irish whiskey, vanilla bean paste and salt. Beat together until fluffy.

Add frosting to the piping bag and pipe on the frosting.
