This watermelon Greek salad is a refreshing take on the classic Greek salad. Full of sweet watermelon, red onions, cucumbers, olives, feta cheese, and lots of fresh herbs.

Ingredients

  • 4 cups cubed watermelon
  • 2 cups cubed cucumbers
  • 1-1/2 cups cubed feta cheese
  • 1/2 cup whole kalamata olives
  • 1/4 cup minced fresh parsley
  • 1/4 cup minced fresh mint
  • 1/2 red onion thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Kosher salt to taste
  • Black pepper to taste

Instructions

  • In a large bowl add cubed watermelon, cucumbers, feta cheese, kalamata olives, parsley, mint, and red onion.
  • In a small bowl whisk together olive oil and red wine vinegar.
  • Pour over the watermelon mixture and stir to combine.
  • Taste the salad and season with the desired amount of kosher salt and black pepper.
