- 4 cups cubed watermelon
- 2 cups cubed cucumbers
- 1-1/2 cups cubed feta cheese
- 1/2 cup whole kalamata olives
- 1/4 cup minced fresh parsley
- 1/4 cup minced fresh mint
- 1/2 red onion thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Kosher salt to taste
- Black pepper to taste
In a large bowl add cubed watermelon, cucumbers, feta cheese, kalamata olives, parsley, mint, and red onion.
In a small bowl whisk together olive oil and red wine vinegar.
Pour over the watermelon mixture and stir to combine.
Taste the salad and season with the desired amount of kosher salt and black pepper.
