This shaved Brussels sprout apple bacon salad is the perfect combo of sweet, salty, and savory. Roasted and shaved Brussels sprouts combined with bacon, candied pecans, sliced apples, and pomegranates seeds all drizzled with a simple maple vinaigrette.
Preheat oven to 400 degrees F and line a rimmed baking sheet with a silpat liner or parchment paper.
Add shaved Brussels sprouts onto the prepared baking dish, drizzle with olive oil, and season with kosher salt and pepper. Toss to combine.
Spread out Brussels sprouts and roast for about 10-15 minutes or until slightly soft and they just start to brown. Remove from the oven and let cool to room temperature.
When they are cool add to a large salad bowl and top with sliced apples, pomegranate arils, crispy bacon, and candied pecans.
Drizzle with the desired amount of vinaigrette and toss to evenly coat.
For maple vinaigrette:
In a small mixing bowl add apple cider vinegar, maple syrup, Dijon mustard, kosher salt, and pepper. Whisk to combine.
While whisking slowly pour in olive oil until the vinaigrette is thick and combined. Taste and season with more kosher salt and pepper if needed.
