This shaved Brussels sprouts apple bacon salad is the perfect fall recipe!

Shaved and slightly roasted Brussels sprouts pair perfectly with sweet apple and pomegranate, salty bacon, and drizzled in a sweet maple syrup vinaigrette.

I have easily eaten this salad for dinner but it also makes a great side dish or holiday table addition!

You can also add other ingredients to this salad if you’d like, such as nuts, cheese, or dried cranberries, to give it more texture and flavor.

Ingredients 

For salad:

  • 4 cups shaved Brussels sprouts
  • 2 tablespoons olive oil
  • Kosher salt and pepper, to taste
  • 1 sweet apple, thinly sliced
  • 1 cup fresh pomegranate arils
  • 1 cup chopped crispy bacon
  • 1/2 cup chopped praline pecans

For maple vinaigrette:

  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 2 teaspoons Dijon mustard
  • Kosher salt and pepper, to taste
  • 2/3 cup olive oil

Instructions 

For salad:

  • Preheat oven to 400 degrees F and line a rimmed baking sheet with a silpat liner or parchment paper.
  • Add shaved Brussels sprouts onto the prepared baking dish, drizzle with olive oil, and season with kosher salt and pepper. Toss to combine.
  • Spread out Brussels sprouts and roast for about 10-15 minutes or until slightly soft and they just start to brown. Remove from the oven and let cool to room temperature.
  • When they are cool add to a large salad bowl and top with sliced apples, pomegranate arils, crispy bacon, and candied pecans.
  • Drizzle with the desired amount of vinaigrette and toss to evenly coat.

For maple vinaigrette:

  • In a small mixing bowl add apple cider vinegar, maple syrup, Dijon mustard, kosher salt, and pepper. Whisk to combine.
  • While whisking slowly pour in olive oil until the vinaigrette is thick and combined. Taste and season with more kosher salt and pepper if needed.

    This salad was a big hit at Thanksgiving dinner! Great balance of sweet and savory. The recipe makes a lot of salad dressing but now I have leftovers for other salads.
