Shaved Brussels Sprout Apple Bacon Salad
Ingredients
For salad:
- 4 cups shaved Brussels sprouts
- 2 tablespoons olive oil
- Kosher salt and pepper to taste
- 1 sweet apple thinly sliced
- 1 cup fresh pomegranate arils
- 1 cup chopped crispy bacon
- 1/2 cup chopped praline pecans
For maple vinaigrette:
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 2 teaspoons Dijon mustard
- Kosher salt and pepper to taste
- 2/3 cup olive oil
Instructions
For salad:
- Preheat oven to 400 degrees F and line a rimmed baking sheet with a silpat liner or parchment paper.
- Add shaved Brussels sprouts onto the prepared baking dish, drizzle with olive oil, and season with kosher salt and pepper. Toss to combine.
- Spread out Brussels sprouts and roast for about 10-15 minutes or until slightly soft and they just start to brown. Remove from the oven and let cool to room temperature.
- When they are cool add to a large salad bowl and top with sliced apples, pomegranate arils, crispy bacon, and candied pecans.
- Drizzle with the desired amount of vinaigrette and toss to evenly coat.
For maple vinaigrette:
- In a small mixing bowl add apple cider vinegar, maple syrup, Dijon mustard, kosher salt, and pepper. Whisk to combine.
- While whisking slowly pour in olive oil until the vinaigrette is thick and combined. Taste and season with more kosher salt and pepper if needed.

I kid you not, I made a very similar salad for the blog that's going up soon. I mean, it's basically obvious that we're twins so... :)
