For donuts:
Preheat oven to 350 degrees and grease a 6-count baked donut pan with nonstick spray, set aside.
In a large mixing bowl whisk together all-purpose flour, granulated sugar, baking powder, and kosher salt.
Add in buttermilk, melted butter, egg, lemon zest, and vanilla extract. Stir to combine.
Fold in blueberries.
Add an equal amount of batter to the prepared donut pan.
Top each donut with an equal amount of the streusel mixture.
Bake in the preheated oven for 20-25 minutes or until golden brown and fully cooked.
Let the donuts cool in the pan.
