For donuts: 

  • All-purpose flour – A common baking ingredient that will make up the batter for our donuts.
  • Granulated sugar – Granulated sugar will add sweetness to the donuts.
  • Baking powder – Baking powder will help the donuts to stay fluffy and light.
  • Buttermilk – Buttermilk will give the donuts a moist and tender crumb, with a slight tanginess.
  • Melted butter – Butter will add moisture to the donuts. 
  • Egg – The egg will help emulsify the batter so that all of the ingredients are blended together.
  • Blueberries –  Fresh is best! Blueberries will give little bursts of sweet berry flavor throughout the donut.

For streusel topping: 

  • All-purpose flour – This will comprise most of the streusel topping.
  • Granulated sugar – Granulated sugar will add sweetness to the topping.
  • Melted butter – Melted butter will help the ingredients come together and form the crumbles.

Using frozen berries

If you can’t find fresh blueberries for these baked blueberry streusel donuts, you can substitute them with frozen ones!

Frozen berries are a great alternative because they’re flash-frozen at the peak of ripeness, so they’ll always be sweet and full of flavor.

More stuff about freezing

You can also freeze these donuts for later!

Bake as directed, and let the donuts cool completely.

Then simply wrap them in plastic wrap, and then a layer of aluminum foil, and pop them into the freezer for up to 2 months.

To eat from frozen, just let them thaw at room temp!

Ingredients

For streusel topping:

  • 1/3 cup all-purpose flour
  • 3 tablespoon granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 1/4 teaspoon kosher salt

For donut batter:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup buttermilk
  • 3 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 3/4 cups fresh blueberries

Instructions

For topping:

  1. In a small mixing bowl add all ingredients and mix until crumbly.

For donuts:

  1. Preheat oven to 350 degrees and grease a 6-count baked donut pan with nonstick spray, set aside.
  2. In a large mixing bowl whisk together all-purpose flour, granulated sugar, baking powder, and kosher salt.
  3. Add in buttermilk, melted butter, egg, lemon zest, and vanilla extract. Stir to combine.
  4. Fold in blueberries.
  5. Add an equal amount of batter to the prepared donut pan.
  6. Top each donut with an equal amount of the streusel mixture.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown and fully cooked.
  8. Let the donuts cool in the pan.
