Banana Bread Granola
This banana bread granola is packed with oats, mashed bananas, banana chips, dark chocolate chips, and lots of cinnamon spice. It tastes just like freshly baked banana bread!

Preheat oven to 300 degrees F and line a rimmed baking sheet with parchment paper or silicone liner.
Add rolled oats and pecans to medium sized mixing bowl, set aside.
In a small mixing bowl, whisk together mashed banana, melted coconut oil, brown sugar, vanilla extract, and ground cinnamon.
Pour banana mixture over oat mixture and stir to combine and equally coat.
Add mixture to the prepared baking dish and sprinkle the top with kosher salt.
Add to the oven and bake for about 30-40 minutes, stirring every 10 minutes so the granola does not burn. You know your granola is ready to remove from the oven after it's brown and lightly toasted.
Let the granola cool for about 15 minutes and stir in banana chips and chocolate chips.
Stir to combine and let completely cool.
Serve overtop yogurt, sprinkled on oatmeal or eat by the handful.
