I hate cooking breakfast, but because I’m grown up, I know it’s important to suck it up and eat it – every single day. Luckily, I’ve learned how to make things easier for me, and that “easy” is in the form of granola.

Give me a giant bowl of plain yogurt topped with granola (and maybe some chopped fresh fruit), and I’ll be good until the afternoon.

Especially when that granola is banana bread granola! It literally tastes like freshly baked banana bread but in granola form. It’s made with rolled oats, nuts, mashed bananas, cinnamon, dried banana chips, and mini dark chocolate chips.

It’s so dang good.

My favorite way of serving it is on top of vanilla or homemade yogurt with a drizzle of maple syrup. It’s absolute breakfast perfection.

How to make banana bread granola

Making homemade granola isn’t hard and doesn’t have to feel intimidating. This version gives you the taste of banana bread but in granola form. It’s so delicious overtop yogurt or even as a tiny little crunchy snack.

  1. In a large bowl, mix oats and pecans.
  2. Whisk together mashed banana, melted coconut oil, brown sugar, vanilla extract, and cinnamon in another bowl.
  3. Stir together the oats with the banana mixture.
  4. Lay it on a baking sheet pan and sprinkle it with kosher salt.
  5. Bake until golden and crispy. Make sure to stir the granola as it bakes.
  6. Let it cool, and stir in dried banana and dark chocolate chips.
  7. Store in an airtight container for up to 2 weeks.

Recipe FAQ’s

Absolutely! While I prefer pecans, other tasty options are walnuts, hazelnuts, or almonds. You could also mix two nuts if you can’t pick a favorite.

While I love keeping it simple and using dried banana chips, you could add raisins, currants, golden raisins, or dried plantains instead of dried bananas.

Ingredients

Instructions

  • Preheat oven to 300 degrees F and line a rimmed baking sheet with parchment paper or silicone liner.
  • Add rolled oats and pecans to medium sized mixing bowl, set aside.
  • In a small mixing bowl, whisk together mashed banana, melted coconut oil, brown sugar, vanilla extract, and ground cinnamon.
  • Pour banana mixture over oat mixture and stir to combine and equally coat.
  • Add mixture to the prepared baking dish and sprinkle the top with kosher salt.
  • Add to the oven and bake for about 30-40 minutes, stirring every 10 minutes so the granola does not burn. You know your granola is ready to remove from the oven after it's brown and lightly toasted.
  • Let the granola cool for about 15 minutes and stir in banana chips and chocolate chips.
  • Stir to combine and let completely cool.
  • Serve overtop yogurt, sprinkled on oatmeal or eat by the handful.

  1. For someone who doesn’t like making breakfast, you made some fantastic looking granola! I could eat this every single day.

  2. So…I actually do have a container of (very old) banana chips….it’s probably about time I used them up don’t you think? And yes I am SO with you on breakfast! It’s my favorite meal, but I pretty much only cook it for lunch and dinner. I’m too cranky/lazy in the morning!
