Blueberry Compote

- 2 pints blueberries
- 3 tablespoons brown sugar
- 2 tablespoons water
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- ½ teaspoon vanilla extract
In a 12-inch skillet, set over medium heat, add 1-½ cups blueberries, brown sugar, water, lemon juice, lemon zest, and vanilla extract.
Stir to combine and simmer over medium heat for 10 minutes.
Add the remaining ½ cup of fresh blueberries and simmer for 10 minutes. The mixture should be slightly jammy but still a little loose.
Remove the compote from the heat and let cool. As it cools, the mixture will become more jammy.
