Blueberry Corn Salad

Fresh, easy blueberry corn salad made with sweet corn, juicy blueberries, feta, and a zesty lime dressing. The perfect summer side dish for BBQs and cookouts.

Ingredients

For salad:

  • 2 cups fresh or frozen corn steamed or grilled if you're using fresh corn and defrosted if you're using frozen corn
  • 2 cups fresh blueberries washed
  • cup crumbled feta cheese
  • ¼ cup chopped cilantro
  • 2 whole green onions thinly sliced
  • 1 whole fresh jalapeno pepper seeded and minced

For dressing:

For salad:

  • In a large serving bowl add corn, blueberries, feta cheese, minced cilantro, green onions, and jalapeno pepper.
  • Pour dressing over the salad and toss to combine.
  • Season with more kosher salt and black pepper if needed.

For dressing:

  • In a small bowl add all ingredients and whisk until fully combined. Make sure to thouroughly whisk in the honey.
  • Pour over salad and toss to combine. Can be made a day before just shake before adding to the salad.
