For salad:
- 2 cups fresh or frozen corn steamed or grilled if you're using fresh corn and defrosted if you're using frozen corn
- 2 cups fresh blueberries washed
- ⅓ cup crumbled feta cheese
- ¼ cup chopped cilantro
- 2 whole green onions thinly sliced
- 1 whole fresh jalapeno pepper seeded and minced
For salad:
In a large serving bowl add corn, blueberries, feta cheese, minced cilantro, green onions, and jalapeno pepper.
Pour dressing over the salad and toss to combine.
Season with more kosher salt and black pepper if needed.
For dressing:
In a small bowl add all ingredients and whisk until fully combined. Make sure to thouroughly whisk in the honey.
Pour over salad and toss to combine. Can be made a day before just shake before adding to the salad.
