- 3 large granny smith apples cut into matchsticks pieces
- 2 ribs celery chopped
- ½ fresh jalapeño finely diced and seeds removed
- ¼ cup finely minced cilantro
- ¼ cup fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon kosher salt to taste
Add chopped apples, celery, jalapeño, and cilantro to a large bowl.
Whisk together lime juice, olive oil, and salt in a small bowl.
Pour over apples and stir to combine. Making sure that everything is covered so the apples do not start to brown.
Taste the slaw and add more salt if desired. If you feel like the slaw needs more acid, add more lime juice.
