How is it Thursday already?
Memorial day came and went and I didn’t even bring it up on the blog…whoops!
So tell me, how was your Memorial Day? Was it warm? Did you spend time in the pool?
I hate to be a total whiner but it was cold here. Like really cold.
On Saturday I think the high was maybe 50 degrees and it poured rain the whole day.
Not exactly the kick-off to summer I imagined.
I tried to make the best of the rainy weather and decided not to let it affect my mood.
I was determined to have a good weekend!
I had to work on Friday and Saturday but don’t worry. I still had a good time! When you work as a nanny {to one child who is 12 working can actually be a blast.
On Friday we went out to dinner and then on Saturday we spend the whole day shopping. Not a bad start to the weekend…am I right?
Of course, we ended the night by grilling some hot dogs on the grill.
The sun finally made an appearance around dinner time so we took advantage. Is there anything better than hot dogs on the grill?

For the remainder of the weekend, I spend some time with my amazing husband.
And I’m happy to report I finally broke him down and we bought a grill!!!
I grill all the time at work so finally having one at home is making me giddy with excitement.
I also made him come with me to Trader Joe’s {that place is amazing!} and he even watched The Bachelorette on Monday night with me. Ladies and gentlemen. I have a keeper!
Alongside our fresh grilled meal, I made a simple slaw made from cilantro, apples, and celery. It’s crisp, easy to throw together, and perfect for summer!


Cilantro Apple Slaw
This cilantro apple slaw is the perfect summertime salad. Packed full of crisp sliced apples, cilantro, jalapeno, lime, and celery. It's light and refreshing.
Ingredients
- 3 large granny smith apples, cut into matchsticks pieces
- 2 ribs celery, chopped
- 1/2 jalapeño, finely diced and seeds removed
- 2 tablespoons - 1/4 cup finely minced cilantro
- 1/4 cup fresh lime juice
- 1 tablespoon olive oil
- Kosher salt, to taste
Instructions
- Add chopped apples, celery, jalapeño, and cilantro to a large bowl.
- Whisk together lime juice, olive oil, and salt in a small bowl.
- Pour over apples and stir to combine. Making sure that everything is covered so the apples do not start to brown.
- Taste the slaw and add more salt if desired. If you feel like the slaw needs more acid, add more lime juice.

Well yes, I am one looking for a few last minute recipe for my dinner. This is definitely a salad that I think will get everyone's attention, is not too difficult and doesn't screw up anyone's allergies. I have one member who is allergic to pork. I wish I could get you to Fed Ex me a couple slices of your ham. Sigh.

Brandy this slaw looks so good and so refreshing for summer. Is it bad that my husband is the one trying to persuade me to watch the bachelor/bachelorette with him? lol.
