Garlic Herb Roasted Olives

These garlic herb roasted olives are the perfect snack food! They are salty, packed full of garlic, thyme, and orange flavor, and ready in just 15 minutes!

Ingredients

  • 4 cups mixed olives I used castelvetrano, large green Sicilian, nicoise, and kalamata
  • ¼ cup extra virgin olive oil
  • 6 sprigs thyme leaves removed
  • 4 cloves garlic thinly sliced
  • ½ teaspoon crushed red pepper flakes
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest

Instructions

  • Preheat oven to 400 degrees F.
  • On a rimmed baking sheet add olives, olive oil, thyme leaves, sliced garlic and crushed red pepper flakes. Stir to combine and evenly coat.
  • Add to the oven and bake for 10 minutes.
  • Remove olives from the oven and cover the olives with orange zest and orange juice. Toss to combine.
  • Serve warm or room temperature.
