These garlic herb roasted olives are the perfect snack food! They are salty, packed full of garlic, thyme, and orange flavor, and ready in just 15 minutes!

I know summer is almost over, but I’m still not over sitting outside and enjoying my life. I swear, I overheat easily, but man, oh man, do I enjoy taking in all that fresh summer air.
The other thing I love about summer is all the outdoor dinner parties I get to plan! Of course, no dinner party is complete without some snacky snacks—in this case, roasted olives!
These are not your average olives. I used a mix of castelvetrano, large green Sicilian, nicoise, and kalamata and tossed them in olive oil, thyme, garlic, and crushed red pepper flakes. Then, I roasted them and threw them in orange zest and orange juice.
How amazingly simple and delicious!
Just remember to warn your guests that your olives have pits. No broken teeth at our dinner party!

How to make roasted olives
I love a showstopper of a snacky appetizer that only takes 15 minutes to bake up. These olives are so easy to make; all your guests will love them!
- Preheat your oven. Mix olives, olive oil, thyme, garlic, and red pepper flakes in a bowl.
- Add to a sheet pan and roast for 15 minutes.
- Remove from the oven and toss in orange zest and orange juice.
- Serve roasted olives warm or at room temperature.

Ingredients
- 4 cups mixed olives, I used castelvetrano, large green Sicilian, nicoise, and kalamata
- ¼ cup extra virgin olive oil
- 6 sprigs thyme, leaves removed
- 4 cloves garlic, thinly sliced
- ½ teaspoon crushed red pepper flakes
- 2 tablespoons orange juice
- 1 tablespoon orange zest
Instructions
- Preheat oven to 400 degrees F.
- On a rimmed baking sheet add olives, olive oil, thyme leaves, sliced garlic and crushed red pepper flakes. Stir to combine and evenly coat.
