For corn salsa:
- 3 ears of sweet corn steamed or grilled, about 2 cups
- 1/2 lime juiced
- 1/2 cup halved cherry tomatoes
- 1/4 cup minced cilantro
- Kosher salt to taste
- Black pepper to taste
- Olive oil
For London broil:
Preheat your grill to medium-high heat.
Gently blot your London Broil and set it to the side while you prepare your spice blend.
In a small bowl mix together chili powder, kosher salt, smoked paprika, cumin, and black pepper.
Season both sides of the meat with an equal amount of the seasoning blend.
Add the London broil to the grill and cook for a few minutes on both sides. Depending on the thickness of your meat and personal doneness preferences you will have to adjust cooking time. I cook mine for about 5-7 minutes per side.
Remove from the grill and let the meat rest while you prepare the salsa.
After the meat has rested, slice against the grain and serve with corn salsa overtop.
For corn salsa:
Cut steamed corn off the cob and stir with lime juice, tomatoes, and cilantro.
Season with kosher salt, black pepper, and a little drizzle of olive oil.
Taste the salsa and season with more lime juice, salt, or pepper if needed.
Serve overtop the meat.
