Summmmmmeeeeerrrrrrr is here! I’m actually sitting outside in Nantucket as I write this post.

How summer is that?

I mean is there a more summer statement than saying you’re sitting outside in Nantucket?

I think the only thing that could make this more summer is if I were wearing boat shoes and pastel-colored shorts.

For the record I am not wearing NOR do I own any pastel-colored shorts.

However, the one thing I can get behind is good food made on the grill.

I’m so much about grilling out in the summer that I pretty much exclusively grill. It makes clean-up so easy PLUS nothing beats that charred grilled flavor.

I have to admit that I almost never give London Broil a chance.

I look at it in the case and think “yeahhhhh I’m gonna just go with a real steak” and grab a ribeye.

But then I was given a beautiful London broil and I knew I had to give it a chance.

So what better way to give a big piece of beef a try than by throwing on some simple spices, grilling it, and then covering it in a simple corn salsa?

And when I say “simple corn salsa” I’m really not kidding. This salsa is just a few simple ingredients – fresh sweet corn, cherry tomatoes, cilantro, lime, and a drizzle of olive oil.

It is so easy you will find yourself spooning it into your mouth before you have time to put it over top of your meat.

Why grill London Broil?

When cooked properly London Broil can be very flavorful and juicy, with a slightly charred exterior and a tender, pink center.

It is often served thinly sliced, which makes it easy to portion and great for large families or even summer BBQs.

But, the real reason that London Broil is a winner is that it’s a relatively inexpensive cut of meat compared to other types of steak like ribeye, porterhouse, or filet mignon.

That makes it a great affordable option for those looking to enjoy a delicious steak dinner without breaking the bank.

Plus with the addition of fresh corn salsa, you have a delicious bright and summery salad to go alongside or piled on top.

Ingredients 

For London broil:

For corn salsa:

  • 3 ears of sweet corn, steamed or grilled, about 2 cups
  • 1/2 lime, juiced
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup minced cilantro
  • Kosher salt, to taste
  • Black pepper, to taste
  • Olive oil

Instructions 

For London broil:

  • Preheat your grill to medium-high heat.
  • Gently blot your London Broil and set it to the side while you prepare your spice blend.
  • In a small bowl mix together chili powder, kosher salt, smoked paprika, cumin, and black pepper.
  • Season both sides of the meat with an equal amount of the seasoning blend.
  • Add the London broil to the grill and cook for a few minutes on both sides. Depending on the thickness of your meat and personal doneness preferences you will have to adjust cooking time. I cook mine for about 5-7 minutes per side.
  • Remove from the grill and let the meat rest while you prepare the salsa.
  • After the meat has rested, slice against the grain and serve with corn salsa overtop.

For corn salsa:

  • Cut steamed corn off the cob and stir with lime juice, tomatoes, and cilantro.
  • Season with kosher salt, black pepper, and a little drizzle of olive oil.
  • Taste the salsa and season with more lime juice, salt, or pepper if needed.
  • Serve overtop the meat.
