Lemon Herb Hummus Vinaigrette

- 1/2 cup original hummus
- 1 lemon zested
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons chopped fresh rosemary
- 2 teaspoon chopped fresh oregano
- 1 teaspoon fresh thyme leaves
- Water as needed
- Kosher salt to taste
- Black pepper to taste
In a mixing bowl add all the ingredients except the kosher salt and the black pepper.
Whisk vigorously to combine. Thin out the dressing with water until you reach your desired consistency. I like to add water tablespoon by tablespoon so it does not get too runny.
Taste the vinaigrette and season with the desired amount of kosher salt and black pepper.
