Shrimp Tacos with Apple Pomegranate Salsa
These shrimp tacos with apple pomegranate salsa are sauteed in cajun seasoning and topped with a delicious salsa made from apples, pomegranates, red onion, cilantro and lime.

- 1-1/2 pounds medium-sized shrimp cleaned and shelled
- 2 tablespoons Cajun seasoning low salt
- 2 tablespoons unsalted butter
- 2 whole limes juiced, divided
- 2 sweet red apples cored and small diced
- 1 small red onion small diced
- 1/3 cup pomegranate arils
- 1/4 cup minced cilantro
- ½ teaspoon Kosher salt
- ¼ teaspoon black pepper
- 8 small corn tortillas toasted
- ⅓ cup Cotija cheese for topping
In a bowl add shrimp and toss with Cajun seasoning.
In a 12-inch skillet set over medium high heat add butter. Once hot add in the shrimp and half way through cooking add in the juice of 1 lime. Continue cooking until all the shrimp are pink. Set aside.
While the shrimp cook (or earlier in the day) start making the slaw.
In a bowl combine apples, red onion, pomegranate arils, cilantro, lime juice, kosher salt and black pepper. Stir to combine.
To make tacos add 4-5 shrimp per taco onto toasted corn tortilla. Top with desired amount of salsa and cotija cheese.
