Shrimp Tacos with Apple Pomegranate Salsa

These shrimp tacos with apple pomegranate salsa are sauteed in cajun seasoning and topped with a delicious salsa made from apples, pomegranates, red onion, cilantro and lime.

Ingredients

  • 1-1/2 pounds medium-sized shrimp cleaned and shelled
  • 2 tablespoons Cajun seasoning low salt
  • 2 tablespoons unsalted butter
  • 2 whole limes juiced, divided
  • 2 sweet red apples cored and small diced
  • 1 small red onion small diced
  • 1/3 cup pomegranate arils
  • 1/4 cup minced cilantro
  • ½ teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • 8 small corn tortillas toasted
  • cup Cotija cheese for topping

Instructions

  • In a bowl add shrimp and toss with Cajun seasoning.
  • In a 12-inch skillet set over medium high heat add butter. Once hot add in the shrimp and half way through cooking add in the juice of 1 lime. Continue cooking until all the shrimp are pink. Set aside.
  • While the shrimp cook (or earlier in the day) start making the slaw.
  • In a bowl combine apples, red onion, pomegranate arils, cilantro, lime juice, kosher salt and black pepper. Stir to combine.
  • To make tacos add 4-5 shrimp per taco onto toasted corn tortilla. Top with desired amount of salsa and cotija cheese.

Notes

  • Great sweet apple options are Honeycrisp, Fuji, or Cosmic Crisp. 
  • Toast your corn tortillas for the best flavor and texture.
