If you follow me on Instagram you might have noticed that about a month ago I went on a cruise to Mexico. I partnered up again with Princess Cruise Line and this is the first post (of six!) where I’m going to be talking about my trip and all the deliciousness I had while in Mexico. Now, I realize you’re probably thinking to yourself “ummmmmm why is she posting tacos if she wants to talk about a cruise?” Well, it’s because I literally ate my weight in tacos while in Mexico. Literally. Every. Single. Stop. we went too we got tacos. Some of them were smothered in beans and sauce and others were literally eaten while running to make sure I got back on the cruise in time.

While we were in Mazatlan I learned they are very well known for their shrimp so it was a no-brainer that I would be making shrimp tacos the second I got home. PLUS I wanted to make sure that these tacos worked perfectly for winter so that is where this delicious apple pomegranate salsa comes into play. I actually found myself shoveling the salsa into my mouth after I ate WAY TOO MANY tacos. I was supposed to share the tacos with my husband but I made these in the middle of the day so they had to be eaten. You get it. Wouldn’t want to waste delicious seafood – especially shrimp!

I also think these tacos would be pretty awesome for a totally non-traditional Christmas dinner. That pop of red from the pomegranate is totally Christmas.

Eating these tacos totally made me want to go back to Mexico too. It was sorta sad to say goodbye to the Ruby Princess but I have BIG plans to go back soon. PLUS I need more Mexican tacos in my life.You get it.

Shrimp Tacos with Apple Pomegranate Salsa

These shrimp tacos with apple pomegranate salsa are the perfect balance of sweet and heat. The shrimp are sauteed in cajun seasoning and topped with a delicious salsa made from apples, pomegranates, red onion, cilantro and lime. You'll love these super easy and crazy delicious tacos.

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

  • 1-1/2 pounds medium-sized shrimp, cleaned and shelled
  • 2 tablespoons cajun seasoning
  • 2 tablespoons unsalted butter
  • 2 limes, juiced, divided
  • 2 apples, cored and small diced
  • 1 small red onion, small diced
  • 1/3 cup pomegranate arils
  • 1/4 cup minced cilantro
  • Kosher salt, to taste
  • Black pepper, to taste
  • Small corn tortillas, toasted
  • Cotija cheese, for topping

Directions:

In a bowl add shrimp and toss with Cajun seasoning.

In a 12-inch skillet set over medium high heat add butter. Once hot add in the shrimp and half way through cooking add in the juice of 1 lime. Continue cooking until all the shrimp are pink. Set aside.

While the shrimp cook (or earlier in the day) start making the slaw.

In a bowl combine apples, red onion, pomegranate arils, cilantro, lime juice, kosher salt and black pepper. Stir to combine.

To make tacos add 4-5 shrimp per taco onto toasted corn tortilla. Top with desired amount of salsa and cotija cheese.

Made these for dinner tonight. They were delicious and so easy to prepare. We will definitely be making these again as long as pomegranates are in season.

I've been craving tacos ever since getting back from the cruise and now I want to trash the idea of turkey on Thanksgiving and serve these tacos instead!
