Preheat oven to 400 degrees F and prepare a sheet pan with parchment paper or a Silpat liner, set aside.
Slice cabbage into 1-inch wide pieces.
Drizzle about 1 teaspoon of olive oil over each slice.
Add salt, pepper, and garlic powder to each slice.
Roast for about 15 - 20 minutes until cabbage is soft, a little brown but not burnt.
