Simple Roasted Cabbage

This simple roasted cabbage is super simple and super tasty! The flavor of the sweet cabbage concentrates for a seriously delicious side dish for your next meal.

Wait, I know what you’re thinking–how can the humble cabbage be an exciting side dish?

This simple roasted cabbage is so easy to make, and yet so full of flavor. 

Cabbage is packed with vitamins and nutrients, and roasting it in the oven adds layers of complexity, and concentrates the natural sweetness in the cabbage. 

It’s also super economical and versatile, and pairs nicely with almost any main course! 

You may be surprised at how much you’re going to love this simple roasted cabbage.

Ingredients for simple roasted cabbage

  • Cabbage – I’ve used regular green cabbage here. It’s widely available at any grocery store and is super economical.
  • Garlic powder – This gives our cabbage a great savory and earthy flavor.
  • Olive oil – Try your best to use the most flavorful olive oil you can, this will give our cabbage even more flavor. 
  • Kosher salt and black pepper – Salt and pepper help to bring out all of the flavors in our dish. 

Using other cabbage varieties

I’ve used simple green cabbage here, but feel free to use your favorite cabbage variety in this recipe!

Additional flavors

Some of my favorite ways to finish off simple roasted cabbage are, after roasting, squeezing fresh lemon juice over the top and sprinkling with finely chopped flat-leaf parsley. This helps brighten the flavors and complement the sweetness of the cabbage. 

Another great addition would be crumbled cooked bacon over the top, to add a savory, and salty bite!

Where to use simple roasted cabbage 

There are so many different ways to use simple roasted cabbage, here are just some of my favorites:

  • Chopped up and stirred into some pasta with butter and black pepper
  • Served alongside a roasted chicken, pot roast, or any grilled meat
  • Chopped up and put inside a wrap or sandwich with chicken, turkey, or tuna with veggies for a tasty lunch

Storage and leftovers 

Any leftover simple roasted cabbage can be stored in an airtight container and kept in the refrigerator for up to 3 days.

To reheat, simply place in a microwave-safe dish, covered loosely with a damp paper towel, and heat for 2-3 minutes or until heated thoroughly.

  • Preheat oven to 400 degrees F and prepare a sheet pan with parchment paper or a Silpat liner, set aside.
  • Slice cabbage into 1-inch wide pieces.
  • Drizzle about 1 teaspoon of olive oil over each slice.
  • Add salt, pepper, and garlic powder to each slice.
  • Roast for about 15 – 20 minutes until cabbage is soft, a little brown but not burnt.

My daughter came and visited while my husband was in the hospital she helped me with the shopping along with cooking. We had a wonderful time where she showed her ol' momma a thing or two about cooking. This was one of the dishes she said we had to try and make. We fell in love with it. It was wonderful. Just plan great. Simple, easy, tastes great. So now I make ourselves roasted dinner nights, sliced sweet potatoes, cabbage sliced, sliced cauliflower, or nice new potatoes and serve it with a roasted meat. The meat comes out and rests while we slide a pan of vegetables in to roast. Simple easy, fresh cooking Yup that works.

My favorite way to make any veggie lately is to roast them. That said, I've never roasted cabbage but I do love it. I will definitely be making roasted cabbage soon Brandy. Thanks for the suggestion!!!

I loooove cabbage! I've been meaning to try roasting it but I always forget when I have a cabbage(plus, hubby always complains about cabbage). I must try this next time though!

I love cabbage (partly due to my Polish heritage). I always buy it to make in a recipe but usually end up just eating it sautéed or roasted. So simple and so delicious, love to see another cabbage lover out there!
