Tomato Feta Salad

This easy flavor-packed tomato feta salad has sweet cherry tomatoes, feta cheese, shallots, fresh basil, lemon, olive oil, and vinegar. It is deliciously simple and great as a BBQ side dish.

Ingredients

  • 2 pints cherry tomatoes halved
  • 1 whole shallot peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • ¼ cup chopped fresh basil
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice fresh
  • 1 tablespoon lemon zest fresh
  • 1 tablespoon red wine vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • In a large mixing bowl add all ingreidents and stir to combine.
  • Cover and store in the refrigerator for at least 2 hours for optimal flavor.
  • Before serving, taste and season with more kosher salt if desired.
