In this version, I married sweet little cherry tomatoes with salty feta cheese, shallots, fresh basil, and lemon. It’s somewhat Italian, somewhat Greek in flavor, and pairs perfectly with everything from Air Fryer Pork Tenderloin to Greek Zucchini Fritters to a Turkey BLT Sandwich.

I like to keep it simple by buying crumbled feta, but fresh block feta would also work here. It’s important to use whatever you can find and whatever happens to be your favorite.

The added lemon to the salad brings a big burst of freshness to the dish that I think takes it over the top. Remember, using fresh lemon juice and zest is best, so don’t skip out.

Ingredients 

  • 2 pints cherry tomatoes, halved
  • 1 whole shallot, peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • ¼ cup chopped fresh basil
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice, fresh
  • 1 tablespoon lemon zest, fresh
  • 1 tablespoon red wine vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
