Vanilla Bean Dutch Baby

For Dutch baby:
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup white whole wheat flour
- 1 tablespoon vanilla bean paste
- 2 teaspoons brown sugar
- 1/8 teaspoon kosher salt
- 2 tablespoons unsalted butter melted
For topping:
- ¼ cup mascarpone cheese
- ¼ cup heavy whipping cream
- 2 teaspoons vanilla bean paste
- Fresh cut strawberries
- Fresh blueberries
- Powdered sugar optional
For Dutch baby:
In a blender add eggs, whole milk, flour, vanilla bean paste, brown sugar, and kosher salt.
Blend until completely mixed. Let rest for 20 minutes.
Shortly before the 20 minutes are up preheat your oven to 425 degrees F and add the warm melted butter to your 12-inch skillet.
Pour in the batter and place into the oven.
Bake for 15-18 minutes or until the Dutch baby is puffed up and lightly golden brown.
Remove from the oven and let cool slightly. When the Dutch baby slightly deflates, top with mascarpone mixture, fresh berries, and powdered sugar.
