Ingredients

For Dutch baby:

  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup white whole wheat flour
  • 1 tablespoon vanilla bean paste
  • 2 teaspoons brown sugar
  • 1/8 teaspoon kosher salt
  • 2 tablespoons unsalted butter melted

For topping:

  • ¼ cup mascarpone cheese
  • ¼ cup heavy whipping cream
  • 2 teaspoons vanilla bean paste
  • Fresh cut strawberries
  • Fresh blueberries
  • Powdered sugar optional

Instructions

For Dutch baby:

  • In a blender add eggs, whole milk, flour, vanilla bean paste, brown sugar, and kosher salt.
  • Blend until completely mixed. Let rest for 20 minutes.
  • Shortly before the 20 minutes are up preheat your oven to 425 degrees F and add the warm melted butter to your 12-inch skillet. 
  • Pour in the batter and place into the oven.
  • Bake for 15-18 minutes or until the Dutch baby is puffed up and lightly golden brown.
  • Remove from the oven and let cool slightly. When the Dutch baby slightly deflates, top with mascarpone mixture, fresh berries, and powdered sugar.

For topping:

  • In the bowl of an electric mixer add mascarpone cheese, heavy whipping cream, and vanilla bean paste. Whip until combined and fluffy.
