After looking at these pictures I realized that I really need to work on my hand pie making skills. Obviously they are not bakery worthy but they are totally fine for me, myself and I. Oh and the husband. He is a pretty big fan of pie. But then again who isn’t?

That’s why you’re going to LOVE this week. It’s pie week!

Bourbon Apple Hand Pies

Yield: 8 hand pies

Prep Time: 30 minutes

Cook Time: 25 minutes

Total Time: 55 minutes

Ingredients:

Pie Crust:
2 cups all purpose flour
1 teaspoon kosher salt
1/3 cup cold unsalted butter, cut into small cubes
1/3 cup cold lard, cut into small cubes*
5-6 tablespoons ice water

Filling:
1 tablespoon unsalted butter
2-1/2 cup chopped apples
2 tablespoons Truvia Baking Blend*
1/2 teaspoon molasses*
3/4 teaspoons apple pie spice
2 tablespoons bourbon

* If you're not a fan of lard you can substitute by using more butter, crisco or butter flavored crisco.

Directions:

For Pie Crust:
In a large bowl whisk together flour and kosher salt.

Add butter and lard and blend into the flour using a pastry blender until the flour resembles wet sand with little pieces of pea size butter/lard pieces.

Add in 3 tablespoons ice cold water and mix. Add in more water until you reach a consistency that will hold together and roll out.

Flour your rolling surface and rolling pin. Cut the dough ball in half, and roll out both halves of the dough into a 9-inch circles.

Cut each dough circle into quarters, add to a silpat lined baking sheet and chill while you make your filling. You may need to use 2 baking sheets.

Note: This recipe makes TWO 9-inch pie crusts and can be cut in half.

For filling:
In a skillet add butter and melt over medium heat.

Add in apples, Truvia baking blend, molasses, apple pie spice and bourbon.

Cook for about 7 minutes until the mixture has thickened a bit and apples are soft but not falling apart.

Remove from heat and let cook to room temperature.

While the apples cool preheat the oven to 375 degrees.

Once the apples are cool add about 2-3 tablespoons filling in the middle, fold over and press together the edges with a fork and cut an X into the middle of the top.

Bake for about 20-25 minutes until lightly browned and fully cooked.

Note: *You can also use 1/4 cup brown sugar

    I love hand pies! (And coincidentally just posted about some, too.) For some reason, I just don’t like regular pie but a portable hand pie seems like more of a snack. With bourbon. :-)
