Listen, if there is one thing that people love it’s hummus. Every single time I bring it to holiday events people go crazy. The last holiday party my nephew walked into the door and was all “hey….did you bring hummus?” Dude, where is my hello? You can’t just ask for hummus before you say hello to your aunt. I’m pretty sure that a rule.

Luckily for my nephew (and the rest of the world) I came up with the perfect Fourth of July hummus appetizer. I quickly grilled some olive oil drizzled pita, spread the top with my husbands favorite Sabra supremely spicy hummus and then topped that  with a fresh Greek salad. I know in true Greek fashion there should be olives on the salad but I forgot to buy them…whoops! Plus I really dislike olives and I wanted to eat the salad. So maybe I purposefully forgot the olives.

One will never know.

Greek Salad Hummus Pita Pizza

These greek salad hummus pita pizzas are the perfect summertime appetizer or main course meal. Olive oil grilled pita topped with spicy hummus and fresh Greek salad. You're going to love this!

Yield: 6 mini pita breads

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Ingredients:

  • 6 mini whole wheat pita bread
  • 3/4 cup olive oil, divided
  • 12 tablespoons spicy Sabra hummus
  • 3 cups mixed baby greens or baby arugula
  • 1/2 English cucumber, thinly sliced
  • 1/2 cup grape tomatoes, cut in half
  • 1/2 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh minced dill
  • 1 tablespoon fresh minced mint
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • Kosher salt and pepper, to taste

Directions:

Preheat outdoor grill or grill pan.

Lay out pita bread and baste the top of the pita with olive oil. Save the remaining olive oil, there should be about 1/2 cup left.

Grill pita just until toasted.

Spread 2 tablespoons hummus on the top of each piece of pita bread.

In a large bowl add greens, cucumber, tomatoes, red onion, feta cheese, dill and mint. Toss to combine.

In a small bowl whisk together red wine vinegar, Dijon mustard, kosher salt and pepper. While whisking slowly drizzle in remaining olive oil until you create a combined mixture.

Drizzle half the dressing on the salad, toss and taste. If you want/need more dressing add more until the salad is dressed to your liking.

Add a handful of the salad onto each hummus topped pita bread and sprinkle with fresh cracked pepper.

To serve as an appetizer cut each pita into 4 wedges. To serve as a main course keep whole.

Quick, easy and delicious! Loved this! I don't have a grill so I stuck pita in the oven on 425 for about 7 minutes. I also skipped the mint. Will make again!
