There is nothing better than summer and cookouts. If I had my way I would do ALL my cooking on the grill. It cuts down on cook time and clean up is always a breeeeeeze! Basically, I’m just lazy in the summer and try to think of ways to not spend my time cleaning up my kitchen.

Now, this recipe is a little different than your normal bbq recipe because it’s pizza! That means you can still grill out and have pizza Friday! Or pizza Monday. Or really, pizza any day. Grilled Chicken Sausage Pizza

This grilled chicken sausage pizza is made 100% on the grill and is perfect for jazzing up your normal bbq routine. Topped with grilled chicken sausage, mushrooms, cherry tomatoes, mozzarella cheese and lots of fresh basil. You'll want to make this part of your summer as soon as possible!

Yield: 2-4 servings

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1 pound pizza dough 
  • Extra virgin olive oil 
  • 1 cup shredded mozzarella cheese, divided 
  • 1 pack al fresco sweet and smoky bbq chicken sausage, grilled and sliced 
  • 1/2 cup thinly sliced mushrooms 
  • 1/2 cup halved cherry tomatoes 
  • Sliced or torn basil, for topping
  • Fresh cracked pepper, for topping
  • Crushed red pepper, for topping
  • Grated Parmesan, for topping

Directions:

Preheat your grill to high heat.

Separate your dough into 2 equal sized pieces and spread out as if you were making a pizza normally.

Drizzle a little olive oil over the top of the dough and spread out to coat evenly. Add the olive oil side of the dough down to the grill and spread a little more olive oil on the top side. Let the dough cook for about 2-3 minutes or until the dough starts to firm up and can be lifted up from the grill without tearing or sticking.

Flip your dough and quickly top your pizzas with a little cheese, sliced sausage, sliced mushrooms, halved tomatoes and remaining shredded cheese. Turn the heat down on the grill and let cook just until the dough is fully cooked and the top of the pizza is melted.

Take the pizza off the grill and top with basil, a few cracks of fresh black pepper, a sprinkling of crushed red pepper and grated Parmesan.

I'm a senior citizen living in a senior complex with no BBQ facilities - can I make this whole flatbread pizza on my large grill pan on the stove? Or can it be translated to the oven? It looks so good - and as soon as I can get to a large supermarket that sells the BBQ Chicken Sausage I'll pick up a couple of packages for the freezer. Love the BBQ flavor and absolutely love the al fresco chicken sausages, especially the maple apple flavor.

Hi, Patricia! If you want to cook the whole pizza in the oven here is what I suggest - spread out the whole dough (like you would make traditional pizza) and then top as instructed. You could also add a little tomato sauce if you wanted. Bake at 425 for about 15-18 minutes or until melted and browned. The al fresco chicken sauce is pre-cooked so you don't have to grill/cook it before you put it on the pizza. You can throw all the ingredients onto the pizza and just bake. I hope you enjoy the pizza! Let me know if you make it and how it turns out :)
