
To be honest I do not have a lot to write about tonight. I’m feeling a little tired and a bit annoyed at myself for not accomplishing my to do list. I did however have a great lunch at the diner (patty melt) and did manage to make a fantastic meal for the BSI feta challenge that Zoe hosted. It’s one of my boyfriends favorite meals and it’s now one of my favorites too. I remember the first time I had this meal. I was nervous and scared because I was eating dinner with my boyfriends mother…It was only the second time I met her. I’m sure we all remember how nervous those first couple of meeting are. You try to sit there acting normal but really in your head you are thinking “does she like me???” Luckily my boyfriend and I have been dating for over three years now so those nervous eating sessions are long gone…Thank God!!!
Now back to the pasta. It has hints of garlic, oregano and basil and is really easy to make. I prefer putting most of the feta into the sauce and then using a little to crumble on top. I also like using fresh pasta over box pasta but whatever you can find in your local market will work fine. The pasta did not photograph well but I assure you it’s beyond delicious! Enjoy!!!
Pasta with Shrimp and Feta:
Tomato Sauce:
1/2 C. butter
2 C. onion – chopped
3/4 C. fresh parsley – minced
28 oz. can crushed tomatoes with basil
2 t. dried oregano
Salt and pepper
3/4 C. sherry
3/4 C. feta cheese
Shrimp:
1/2 C. butter
2 medium garlic cloves – minced
1 1/2 lbs. medium cleaned raw shrimp
Melt butter in heavy medium saucepan over medium-low heat. Add onions and parsley and stir until onions are tender, about 3 minutes. Add tomatoes, oregano, salt and pepper. Increase heat, simmer gently and stirring occasionally, about 20 minutes. Mix in sherry. Increase heat and boil 2 minutes.
In another pan melt butter over medium-high heat. Add garlic and stir 30 minutes. Add shrimp and stir just until pink, about 5 minutes.
Bring sauce to boil. Add shrimp mixture and 2/3 of the feta. Mix until heated through. Serve over pasta.

Shrimp + feta have not yet entered my palate. I’ll have to change that.

O this does look really delicious! I love love love feta and this is definitely something I am gonna try. The only problem being that my boyfriend does not like feta at all, so will have to wait untill he is gone for a day..:)
