Summer is almost over but I’m not ready to say goodbye to salads. Every single summer I go through a period of major salad craving where I will happily eat it for every single meal.

Yes, that include breakfast.

I’m a freak. I know.

But, this salad is like none other. It’s packed with fresh sweet figs, creamy goat cheese, salty pistachios and drizzled with a homemade fig vinaigrette. I don’t know why I had never thought to make a salad dressing out of fresh figs but I’m damn glad I finally decided too. Super simple and easy to make right in your blender or food processor. Plus it’s so good that I put it on just about everything. Not even kidding. Everything*

*Everything salad based. I didn’t put it on toast or cereal. I’m not that much of a freak.

Actually, speaking of my freakiness I have a confession. Apparently Netflix now has Girl Meets World and I have totally been watching it. That’s right. I’m a 33 year old woman watching a show targeted at 10 year old girls. I mean I loved Boy Meets World and it has the original Cory and Topanga so how am I not going to watch it?

I feel if I didn’t watch it would actually be a crime.

It’s at this point in my life that I realize I should not be allowed to be an adult. I’m basically just a large child with power. Who apparently still like to watch shows for kids.

If you find yourself watching Girl Meets World and need a salad to munch on you should most definitely sit back, relax and enjoy this baby. PLUS it’s a great excuse to eat all. the. goat. cheese.

Because who doesn’t want a reason to eat goat cheese and figs?

Fig Goat Cheese Salad with Fig Vinaigrette

This fig goat cheese salad with fig vinaigrette is the perfect late summer salad. Packed full of fresh figs, goat cheese, pistachios and a homemade fig vinaigrette.

Yield: 2 servings (plus leftover vinaigrette)

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Ingredients:

For salad:

  • 6 cups baby arugula
  • 1 cup quartered fresh figs
  • 1/2 cup chopped salted pistachios
  • 1/2 cup crumbled fresh goat cheese

For vinaigrette:

  • 2 tablespoons extra virgin olive oil
  • 6 figs, quartered
  • 1 small shallot, roughly chopped
  • 2 tablespoons honey
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • Kosher salt and pepper
  • Water

Directions:

For salad:
On a large salad plate or bowl add arugula and top with fresh figs, pistachios and goat cheese.

Drizzle and toss with fig vinaigrette.

For vinaigrette:

In a medium sized saucepan set over medium heat add olive oil. Once the oil is warmed add in figs and shallot. Sauté until the shallots and fig begin to soften.

To a blender add the saucepan mixture, honey and balsamic vinegar. Blend on high speed until mostly smooth. While the blender is running slowly pour in olive oil. At this point the mixture will be thick. You can use water to thin it out or use it thick. Whatever you like.

Let the vinaigrette cool and use for salad. {There will be a bit of leftover vinaigrette}

I am already daydreaming about this salad. It looks so delicious and I love all the flavors going on here! Truth be told, I’ve never ever purchased a fig before and I really think I need to. I’m pinning this for later and will make it this weekend!

Hey, I’m always watching shows that are probably (okay, actually) meant for a younger generation (Teen Wolf, Awkward)…I mean, I don’t FEEL like I’m that much older, so why not? 😉 Now, pass me a salad so I can eat it while I watch! I’m down for anything that has goat cheese and figs.

I am resisting starting Girl Meets World until after my thesis defense..because I feel like I will just sit and watch it all over the course of a 24 hour period. OBSESSED.

Ugh, I need to make this salad ASAP before all the figs disappear!!

I’m with you on this whole I-don’t-want-summer-to-be-over thing. I’m planning on living in denial until the leaves start falling off the trees and someone forcibly shoves a pumpkin spice latte down my throat. 🙂
This salad looks like all kinds of awesome. I’ve had a similar one before with hazelnuts, but pistachios > hazelnuts, so this one of obvs better. Now I just need to track down some fresh figs so I can make a big bowl of this awesomeness!

That is an awesome combo! That salad dressing sounds so good. I’ve never used figs in a dressing. And, btw, don’t feel weird about your Girl Meets World habit. My middle school nieces watched it all summer long, and when it showed up on my Netlix page I watched an episode or two (or maybe the entire season 🙂 Lol!

I have yet to watch Girl Meets World but that doesn’t mean I won’t end up binging on it on a rainy or sick day. It’ll happen eventually. This salad though, that will definitely happen sooner than later.
