Ingredients for herbed Dijon mustard potato salad
- Baby red potatoes – Red potatoes are the perfect waxy potato for this potato salad.
- Thick sliced bacon – I love the addition of salty crunchy bacon.
- Red onion – If you don’t have any red onions on hand you can use shallots for a lighter flavor.
- Mixed fresh herbs – I used a mix of parsley, chives, tarragon, and dill.
- Garlic – Just a touch for added flavor and punch.
- Olive oil – Use a good olive oil as this potato is mayo-free.
- Whole grain Dijon mustard – This brings acid and a big zing of flavor.
- Red wine vinegar – Vinegar also brings in acid and zippy flavor.
- Kosher salt and pepper – Season and add more if desired.
What to serve with herb potato salad
Herbed Dijon mustard potato salad is a delightful side dish that combines the creamy richness of potatoes with the tangy kick of Dijon mustard and the freshness of herbs.
To create a well-balanced and complementary meal, consider serving it with the following dishes:
- Grilled or Roasted Protein: Since potato salad is typically served as a side dish, pairing it with a protein source can make it a complete meal. A few great recipes to try would be my Chimichurri Grilled Shrimp Skewers, Grilled Cilantro Lime Chicken Thighs, Roasted Cornish Hens, or my Chimichurri Flank Steak.
- Fresh Green Salad: A crisp and refreshing green salad with a light vinaigrette dressing can provide a nice contrast to the richness of the potato salad. Try it with my Chopped Kale Caesar Salad, Roasted Beet Feta Salad, or my Green Goddess Salad.
- Grilled Vegetables: Grilled or roasted vegetables like asparagus, zucchini, bell peppers, or corn on the cob can add color, flavor, and texture to your meal. The smoky notes from grilling complement the creamy potatoes.
- Bread or Rolls: A warm baguette or some crusty rolls can complete the meal and provide a bit of extra texture and satisfaction. Try my English Muffin Toasting Bread or my Pumpkin Yeast Bread.
- BBQ Ribs or Pulled Pork: If you’re planning a barbecue-themed meal, potato salad is a great accompaniment to BBQ ribs or pulled pork sandwiches. You’ll love my Slow Cooker BBQ Pulled Pork or my Sticky Spicy Baby Back Ribs.
- Quiche: For a brunch or light lunch option, consider serving the herbed Dijon potato salad alongside a quiche. I think it pairs perfectly with my Bacon Onion Herb Quiche or my Swiss Chard Leek and Gruyere Quiche.
- Pickles and Pickled Vegetables: Pickles, pickled onions, or other pickled vegetables can provide a tangy contrast to the potato salad and add a delightful burst of flavor to your meal. In fact, I have been known to add in a tablespoon of my Quick and Easy Pickled Red Onions!
Why you should use red potatoes
I think red potatoes are one of the best type of potatoes for homemade potato salad. There are few reasons why but here are my top resons:
- Texture: Red potatoes have a waxy texture, which means they hold their shape well when cooked. This is essential for potato salad because you want the potatoes to stay intact and not become mushy or fall apart when mixed with other ingredients and dressing. The firm texture of red potatoes gives the salad a pleasant bite.
- Flavor: They have a mild, slightly sweet flavor that pairs well with a variety of seasonings and dressings. Their natural taste doesn’t overpower the other ingredients in the salad, allowing the flavors of herbs, spices, and the dressing to shine through.
- Thin Skin: Their skin is thin and edible. This eliminates the need for peeling, making the preparation of potato salad more convenient and time-saving. The skin also adds extra nutrients and fiber to the dish.
- Moisture Content: Red potatoes have a slightly higher moisture content compared to some other potato varieties. This moisture helps keep the salad from becoming too dry, ensuring it stays creamy and enjoyable.
If you can’t find red potatoes you can try antoher waxy potato like a Yukon gold.
Using different herbs
This is a really versitile recipe so you can idealy use whatever herbs you have on hand. I think the addition of fresh thyme, basil, or even oregano would be delicious.
Just remember, this salad relys heavily on the herb flavor so make sure to use herbs you love the most.
