Today I’m guest posting over at the fabulous blog Running to the Kitchen. While Gina is off eating delicious pasta and gelato in Italy I’m stuck here in New York. As you can tell, I’m very jealous of her little adventure. Since I know Gina likes to keep things healthy I decided I would share this little gem of a tofu recipe. I originally got the idea from a recipe I saw on Averie Cook’s. Trust me, it’s awesome. You will LOVE it!

BBQ Mango Tofu

This bbq mango tofu is a great way to use tofu while keeping it fresh, light and delicious. You can use whatever bbq sauce you enjoy but don't skimp that fresh mango topping.

Prep Time: 48 hoursplus overnight cooling

Cook Time: 15 minutes

Total Time: 48 hoursplus overnight cooling

Ingredients:

  • 1 block extra firm tofu - frozen, drained and pressed
  • 2 tablespoons olive oil
  • 12 ounces favorite bbq sauce
  • 1/2 cup fresh chopped mango
