Plus the theme song keeps getting stuck in my head so I walk around the house signing it at the top of the lungs. I’m pretty sure my husband thinks I’m even crazier than normal. Which is pretty hard to beat since I’m pretty much just a giant ball of weird.

One of my other obsessions is chicken thighs. I swear I cannot get enough of their deliciousness. I know I have talked about my love of chicken thighs before but their amazingness keeps growing on me. It always stays tender and I honestly do think the flavor kick the butt out of boneless skinless chicken breast.

Sorry breasts. You’re out. Well, unless your used in sandwiches…or fried…or smothered in cheese.

Ok, so I love them both BUT thighs are still my favorite.

If you’re a fan of citrus and herbs this chicken dish is totally up your alley. I used 3 types of citrus (orange, lemon and lime) and a punch of fresh rosemary and thyme. Then you make a quick marinade and roast it up until the chicken skin is super crispy {THE BEST PART!} and the kitchen smells like a citrus heaven.

Citrus Herb Roasted Chicken Thighs

These crispy citrus herb roasted chicken thighs are baked up with lots of fresh herbs and 3 kinds of delicious citrus. Super simple to make and ready in no time!

Yield: 2-4 servings

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour 15 minutes

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 orange, 1/2 juiced and 1/2 sliced
  • 1 lemon, 1/2 juiced and 1/2 sliced
  • 1 lime, 1/2 juiced and 1/2 sliced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons fresh thyme leaves
  • Kosher salt and pepper, to taste

Directions:

Preheat oven to 400 degrees.

Leave the skin on the chicken thighs but trim off any excess skin or fat and set aside.

In a medium mixing bowl add orange, lemon and lime juice. Whisk in olive oil, minced rosemary and thyme leaves. Add in chicken and toss to coat in juice and spices.

In a 8x8 casserole dish add citrus slices to the bottom.

Place chicken onto the top of the citrus slices and pour marinade over the chicken.

Season the tops of the chicken with kosher salt and pepper.

Roasted for about 60 minutes until the top of the skin is crispy and the chicken is fully cooked or has reached 160 degrees.

Remove chicken from the oven and let rest for 5 minutes and serve hot.
