I love many things, but hummus is near the top of that list. If you know me well, you’ll know I’m allergic to sesame. So, that is why I’m using cashew butter in this recipe instead of tahini.

If you’re blessed not to have a sesame allergy, you can use tahini in its place.

I think the thing I love most about hummus is all the dipping.

You can use carrot sticks, celery, pita chips, soft pita bread, a spoon to shovel it directly into your mouth – you get it.

It’s great for snacks or as a simple girl dinner. Plus, with how hot this summer is starting to feel, it’s nice to make a snack without turning on the stove or the oven.

If you own a food processor you can make this hummus right at home!

  1. Add all ingredients except the olive oil to the bowl of the food processor.
  2. Process until mostly smooth and then with the processor running, drizzle in the olive oil.
  3. Blend until smooth and creamy and serve with your favorite dippers.

This edamame garlic scape hummus is crazy delicious and perfect for all those spring garlic scapes. Perfect for dipping with vegetables or pita chips.

Ingredients 

  • 8 ounces steamed edamame
  • 3 whole garlic scapes
  • 1/2 teaspoon dried coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 lemon, zested and juiced
  • 2 tablespoons cashew butter
  • 1/4 cup olive oil

Instructions 

  • In your food processor, add steamed edamame, garlic scapes, coriander, kosher salt, black pepper, lemon zest, lemon juice, and cashew butter.
  • Blend together until smooth and creamy. Slowly add in olive oil through the top of the food processor. You want to make sure the hummus is spreadable and a nice dip consistency. Add more olive oil if needed.
  • Eat right away or store in refrigerator until ready to eat.

Notes

  • If you can’t find garlic scapes use 3 cloves of garlic in its place.
