    Chicken with Bacon and Plums

    1 pkg nitrite-free bacon
    6 chicken breasts
    6 cloves garlic, peeled
    1 pint mini plums, pitted and halved
    1 cup chicken broth
    1 cup white wine
    1Tbsp coconut sugar
    1 Tbsp cinnamon

    Chop and render bacon over medium heat (about 10 minutes). Remove from pan, reserve grease. Chop chicken into bite sized pieces. Salt and pepper liberally. Cook in bacon grease with garlic cloves until browned (about 10 minutes). Remove from pan. In same pan, cook plums with rest of ingredients over high heat until reduced by half (about 10 minutes – see a pattern here?). Add back chicken and bacon and cook on low for 5 more minutes. Serves 4.

    Kids luv it and plums are in season right now!

  2. I lOVE making a vegan mexican casserole: layer corn tortillas with salsa, refried beans, and TVP. Bake in the oven, and you’ve got yoself a masterpiece! You could also sub with ground meat and top with cheese if you’re an omnivore. It’s so simple and yet SO surprisingly tasty. The perfect meal for this busy college kid.

  3. I like to make gluten free peanut butter cookies
    1 egg
    1 cup peanut butter
    1 cup sugar
    1 tsp vanilla extract
    In a bowl combine all ingredients. Drop 1″ balls of dough onto greased cookie sheet. Press a fork into the top of each cookie for the “cross hatch” pattern. Bake for 10-12 minutes. Cool on rack.

  4. That chicken tikka pizza looks incredible; I have yet to make a gluten-free pizza crust, but if I win I am definitely going to! My favorite gluten free recipe is probably the sourdough bread recipe from the Gluten-Free on a Shoestring cookbook!
