These Greek chicken burgers are slathered with Greek yogurt sauce and homemade quick pickled red onions. This sandwich is packed full of flavor!

Here is the thing. I’m having a hard time thinking of what to write about this burger. I would like to say, “It’s amazing. For real. The end.”
But it wouldn’t work to write that and then hit publish. Doing a move like that is equivalent to the classic mic drop…am I right?
Great, now all I can think about is the scene from Coming to America where Randy Watson {from the “What’s Going Down” episode of “That’s My Mama”} and his band Sexual Chocolate play at the black awareness rally. Also, now the song “The Greatest Love of All” is stuck in my head, and the theme song is Soul Glo.

Ok, I should tell you a little bit about this burger. It’s packed full of mint, parsley, feta, and red bell pepper and then topped with quick pickled red onions and a tangy Greek yogurt sauce. Holy yum!
The morning after I made this burger, I had two for breakfast. That’s acceptable…right?
One more thing I love about this dish is that it can be prepped in advance. So, if you normally find yourself in a mad rush at dinnertime, you are in luck—this is the dish for you!

Greek Chicken Burgers

Ingredients
For Greek yogurt sauce:
- ¾ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 2 cloves garlic, grated
- 1 tablespoon finely minced parsley
- 1 tablespoon finely minced mint
- ½ teaspoon kosher salt
For chicken burgers:
- 1 pound ground chicken
- ¼ cup crumbled feta cheese
- ¼ cup finely diced red bell pepper
- 1 tablespoon finely minced mint
- 1 tablespoon finely minced parsley
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 burger sized buns
Instructions
For Greek yogurt sauce:
- Add all ingredients to a small bowl and mix. Keep in the fridge until ready to use. When you are ready to serve, give it a taste and add more salt if needed.
- Remember that the burgers contain feta cheese which will add a bit of salt to the finished sandwich.
For chicken burgers:
- In a large bowl, add ground chicken, feta cheese, red bell pepper, mint, parsley, kosher salt, and black pepper.
- Using your hands mix until thoroughly combined. Form into 4 equal sized patties.
- For cooking in a skillet: Place a 12-inch skillet over medium-high heat and add 2 tablespoons olive oil. When the oil is hot, add the burgers and cook on both sides until the patties are golden in color and the meat is fully cooked, about 5 minutes per side or 165 degrees F internally.
- For cooking on the grill: Preheat your grill to medium-high heat. Add your patties to the grill and cook until fully cooked and the patties are firm, about 10 minutes or 165 degrees F internally.
- To assemble the burgers, add Greek yogurt sauce to the top and bottom of the bun, add the burger, greens of your choice, and a few pickled red onions.

LOL, you have no idea how many posts I want to write with one line like that. At least once a week! We do most of our burgers with ground turkey or chicken so I’m always keeping an eye out for new ideas – absolutely love this one! So much flavor!
