This no bake peppermint cheesecake is perfect for the holidays. Light and fluffy and topped with whipped cream, crushed peppermint candies and PEEPS.

The one thing I love about the holiday season is the fact that I can get away with eating all the sweets I want. I mean I should probably not sit down and eat a whole pie BUT I can eat dessert a few time a week and not feel totally guilty. Mostly because I’m always baking and have tons of leftover desserts.

I also like to use the holidays as an excuse to whip up quick and delicious desserts. This no-bake cheesecakes is in fact just that. Quick, easy and packed full of holiday flavor. It’s made with a chocolate mint cookie crust, topped with a creamy no-bake peppermint cheese filling and then topped with whipped cream, crushed candy cane and a totally perfect PEEPS® chocolate dipped candy cane flavored chick.

Seriously how adorable is this little jarred treat?

I don’t know if I’ve ever told you but I’m a huge PEEPS® fan. When I was a kid I would get them in my Easter basket and then let sit out a few days so they would just slightly harden. Then I would sit down and eat them. It’s the best way to enjoy this classic marshmallow treat.

Trust me!

Now I know you know I love cheesecake. Especially when that cheesecake is no-bake. It’s so easy to make and can be customized for any season or holiday. Plus NO BAKE! I know I keep saying that but seriously it makes me so happy. If you want to get your hands on some fun holiday flavored PEEPS® you can now get 20% off your online order! Just head on over and use the discount code: SWEETINGS15. There is no minimum order and the code is good until December 31st.

No Bake Peppermint Cheesecake

This no bake peppermint cheesecake is perfect for the holidays. Light and fully and topped with whipped cream, crushed peppermint candies and PEEPS.

Prep Time: 15 minutes

Cook Time: 0 minutes

Total Time: 15 minutes

Ingredients:

For cheesecake:

  • 16 ounces cream cheese
  • ½ teaspoon vanilla bean paste
  • ½ teaspoon peppermint extract (more if desired)
  • 1 cup heavy cream
  • 1/3 cup sugar

For crust:

  • 1-1/2 cups crushed chocolate mint cookies
  • 3 tablespoons melted butter

For topping:

  • Crushed candy canes
  • PEEPS chocolate dipped candy cane flavored chicks
  • Whipped topping

Directions:

For cheesecake:
In the bowl of an electric mixer add cream cheese, vanilla bean paste and peppermint extract. Mix together on medium high speed until smooth.

Pour in heavy cream and start incorporating into the cream cheese mixture. It's best to start slow and work your way up in speed. If you try to go too fast at once it will make a mess.

Once the heavy cream is combined turn the speed up to high and beat for about 3 minutes until the mixture is thick and creamy.

Pour in sugar and continue to beat for another minutes until combined.

Carefully spread the mixture on top of the crust (or into jars) and let sit in the fridge for at least 2 hours but can be left overnight as well.

Before serving sprinkle with crushed candy canes, PEEPS and whipped topping.

For crust:
Mix together and press into 6 mini mason jars or tart pans.

Note: The exact number of servings will depend on the size of your mason jars or mint tart containers.

Yeah, I could totally eat this straight but I bet it’s even more delicious on Alexia fries! I always keep a bag or two in the freezer since they’re MUCH quicker than making my own…love them!

Whoa. I think I may need to be alone for a moment with this dip. LOL And if I AM alone with it, I will surely eat the whole darned thing. Dang! And I love Alexia products. We are never (ever!) without a bag of sweet potato fries in our freezer. Now I need to make this dip so that I can dip those beauties right in there!

I made this dip for my baby shower a year ago.
It was a hit! Since then I have made cheese balls for
3 holidays following this recipe, just let it
Get to room temperature to mold, then returned to fridge!
I used less sour cream to maintain firmness.
One of those times I used almonds on the outside of the
cheese ball, another time I shaped it like a 3D
Christmas tree and used the green onions and mini
    Pepperoni as the garnish.
    This dip is simply delicious.

On another note, I do find it quite strange that 3 of these
Comments on the recipe reference dipping
Potatoes into potatoes? There are no potatoes
In this recipe except for what you dip with..
Intriguing… this recipe doesnt need fake reviews!
    It’s good on its own.
