The one thing I love about the holiday season is the fact that I can get away with eating all the sweets I want. I mean I should probably not sit down and eat a whole pie BUT I can eat dessert a few time a week and not feel totally guilty. Mostly because I’m always baking and have tons of leftover desserts.
I also like to use the holidays as an excuse to whip up quick and delicious desserts. This no-bake cheesecakes is in fact just that. Quick, easy and packed full of holiday flavor. It’s made with a chocolate mint cookie crust, topped with a creamy no-bake peppermint cheese filling and then topped with whipped cream, crushed candy cane and a totally perfect PEEPS® chocolate dipped candy cane flavored chick.

No Bake Peppermint Cheesecake
This no bake peppermint cheesecake is perfect for the holidays. Light and fully and topped with whipped cream, crushed peppermint candies and PEEPS.

- 16 ounces cream cheese
- ½ teaspoon vanilla bean paste
- ½ teaspoon peppermint extract (more if desired)
- 1 cup heavy cream
- 1/3 cup sugar
- 1-1/2 cups crushed chocolate mint cookies
- 3 tablespoons melted butter
- Crushed candy canes
- PEEPS chocolate dipped candy cane flavored chicks
- Whipped topping
In the bowl of an electric mixer add cream cheese, vanilla bean paste and peppermint extract. Mix together on medium high speed until smooth.
Pour in heavy cream and start incorporating into the cream cheese mixture. It's best to start slow and work your way up in speed. If you try to go too fast at once it will make a mess.
Once the heavy cream is combined turn the speed up to high and beat for about 3 minutes until the mixture is thick and creamy.
Pour in sugar and continue to beat for another minutes until combined.
Carefully spread the mixture on top of the crust (or into jars) and let sit in the fridge for at least 2 hours but can be left overnight as well.
Before serving sprinkle with crushed candy canes, PEEPS and whipped topping.
Mix together and press into 6 mini mason jars or tart pans.
