These orange cherry oatmeal pecan cookies are crazy good and perfect for Christmas…
I’m totally aware that the title of these cookies are crazy long. Here is the thing. There is a lot of stuff in these bad boys and I couldn’t figure out what to leave out of the title. All of the ingredients are pretty important…you know?
So that’s why there is a crazy long title. To go along with that long name I stacked those puppies sky high. Long name, high stack. This makes zero sense. I really shouldn’t try to write a post when my eyes are heavy. I wish it was totally ok to drink coffee at midnight. It would give me just that little tiny burst energy I need for late night working.
Now these cookies are packed full of good stuff {stuff = title} and are perfect for Christmas. They are citrusy, crunchy, buttery and filled with little nuggets of dried sour cherry. I think they are perfect eaten alone but I could see them being delicious dunked in coffee. Which by the way I would probably never do. I hate soggy cookies. I don’t dunk my Oreos either. I’m weird like that.
I made these cookies for Cookie Swap 2013. I haven’t heard from the recipients so I’m hoping they arrived safe and sound. Orange Cherry Oatmeal Pecan Cookies
These orange cherry oatmeal pecan cookies are packed full of flavor and perfect hot out of the oven. Grab a glass of milk and prepare to dunk.
Yield: about 6 dozen
Prep Time: 20 minutes
Cook Time: 60 minutes
Total Time: 1 hour 20 minutes
Ingredients:
- 1-1/2 cup all purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon apple pie spice
- 1/8 teaspoon ground cloves
- 1 stick unsalted butter, room temperature
- 3/4 cup sugar
- 1 cup dark brown sugar
- 1 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup quick cooking oats
- 2 cups chopped pecans
- 1 cup chopped dried sour cherries
- 1-2 teaspoons orange zest (depending on love of orange flavor)
Directions:
Preheat oven to 350 degrees and prepare a baking sheet with silpat or parchment liners, set aside.
In a medium sized mixing bowl whisk together flour, baking soda, apple pie spice and ground cloves, set aside.
In the bowl of an electric mixer add butter and mix until smooth, about 30 seconds.
Add in sugar, brown sugar, kosher salt and vanilla extract. Mix until fluffy, about 3 minutes.
Incorporate 1 egg at a time until fully mixed.
Add in half the flour mixture, mix on low until just incorporated. Add in other half and again mix until just incorporated.
Stir in (by hand or using mixer) oatmeal, pecans, dried cherries and orange zest.
Using a 2 teaspoons cookie scoop add cookies to prepared baking sheets. Leaving at least 2 inches between cookies.
Bake for 10-12 minutes until lightly browned around the edges. Let cool for 5 minutes on the baking sheet and then move to a cooling rack to completely cooked.
