Pan Roasted Brown Butter Radishes

These pan roasted brown butter radishes are the perfect way to use up all those summer garden radishes. Perfectly sweet, slightly nutty and just a hint of fresh lemon.

It wasn’t until last summer that I actually started to like radishes. Rebecca told me that I had to try them with butter so I made some radish and butter bites and fell in love. They were just the right amount of errrrrything and I ate them all. Rebecca was right. When she tells me to try something I should always listen.
So that’s why I’m here in the kitchen using up radishes again. (I’m also using the radish tops! No waste!) There is simply not enough radish recipes on this site!
Roasted radishes (or pan roasted in this case) give a flavor to the radishes like none other. They have a lovely almost potato like texture and it takes away that spicy bite if that is not your thing. Plus this recipe uses brown butter so you know it’s going to be good. Like really really really good.
You know what else is good? (This is going to be really off topic) Orange is the New Black. I started watching the show when it first came out and binged hardcore. Then when the second season came out I started binging and then weirdly just stopped. Seriously I just stopped. Who does that?

My husband gets so annoyed at me because I do that all the time with shows. We have so many half into shows because I weirdly just lose interest right in the middle of watching. Luckily he loves me so he forgives me when I make him re-binge on a show he thought I had given up on.
For example – this weekend. It was hotter than hell outside so I made it my job to not go anywhere because me + heat = ew gross. Sooooooooo instead I decided to randomly start re-watching OITNB and did it all. weekend. long. Now I’m just down the women’s prison rabbit hole and re-obsessed with all thing Piper, Alex and Red. I’m just happy there is a now a 3rd season so I can just go right into that without dealing with cliffhanger crap.
Well, until I reach the end of the season 3. Sigh.

Ok, back to radishes and less about prison.
Make them. Love them. Eat them.

Pan Roasted Brown Butter Radishes
These pan roasted brown butter radishes are the perfect way to use up all those summer garden radishes. Perfectly sweet, slightly nutty and just a hint of fresh lemon.
Yield: 4 side dish servings
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
- 2 bunches radishes
- 3 tablespoons unsalted butter
- 1/2 lemon zested and juiced
- 4 sprigs fresh thyme, leaves removed
- Kosher salt and pepper, to taste
Directions:
Wash radishes, cut off tops and cut radishes in half. Save the greens if you want to sauté with radishes if not simply throw away.
Add radishes to a large skillet and fill with water just to the tops of the radishes. Bring to a boil and cook for about 5 minutes just until they start to soften but don't completely lose their color. Drain the radishes.
In the same skillet add the butter and let cook over medium heat until the butter becomes nutty and browned. Throw in the radishes and the radish tops if desired. Cook until slightly caramelized and throw in lemon zest, juice, thyme, pepper and kosher salt.
Serve warm as a side dish or a full meal if you're feeling all that vegetable love.

I just oven roasted some radishes last week but burned them to an inedible mess! Your recipe sounds soooooo much better and I will have to give it a try next time. I love radishes cooked!
I do the same thing with TV shows. Just happened with House of Cards. Radishes are something I never get bored of. My family is going to love this dish

I got nothing for TV but I love to hunker down when it’s hot out. Heck, I love to hunker down when it’s cold out, too. And in between times, I’ll hang out on the porch.
These radishes look beautiful–I love that you included the tops. I never do. When I get radish tops in the farm share it’s usually alongside a bag of beets with tops, cabbages, chard, salad mix . . . I’m just overwhelmed with greens.
