On a small baking sheet add halved poblano pepper and white part of the scallion. Drizzle with a small amount of olive oil and season with desired amount of kosher salt.

Roast for about 10 minutes or until the pepper and onion are slightly soft and charred. Once fully cooked remove and let cool.

Once they are cooled dice into small pieces and add to a small mixing bowl. Add in scallion greens, diced apple, cilantro and lime juice. Stir to combine add in a small drizzle of olive oil and season with desired amount of kosher salt. Set aside until ready to use.

For pork chops:
In a small skillet set over medium heat add 2 teaspoons of olive oil.

Place pork chops onto a plate and in a small bowl mix together ancho chile powder, cumin, chipotle chile powder and ground coriander. Rub the spice mixture all over the pork chops and season with desired amount of kosher salt.

Add pork chops to the hot skillet and cook for about 2-4 minutes per side or until browned and medium on the inside. Remove from skillet and let rest.

For sweet potatoes:
Peel sweet potatoes, and cut into 1 inch cubes. Place into a medium sized pot and cover with cold water. Add to a burner set on high and boil until the potatoes are just soft. Drain and place back into the skillet. Add in butter and mash until smooth. If the potatoes are too thick simply thin out with milk. Season with desired amount of kosher salt and pepper.

Love the idea of the salsa. Blue Apron is a fabulous idea especially for people who don’t know what or how to cook. It would take out so much of the stress of “What’s for dinner?”

I would use all caps too, because I have screamed that in my head too many times. My girlfriend had been doing Blue Apron over the last few months and she can not say enough good things about it. The quality of food the instructions {she is not a cook} are easy to follow and the finish product is always delicious, and she always feels proud of the dinner she puts on the table for her family. Such a great way to get everyone cooking well balanced meals at home, even those that don’t like to cook.

I wonder if they’re in Canada? I dig the idea of a service to help people with dinner. So many folks panic and just don’t know what to make. I say heck yes to anything that makes that process easier and more fun for everyone. Cooking should be fun and getting some help is always a good thing. Plus, just look at this meal. Oh em gee, this is stunning. I almost fell off the couch when I read “charred poblano apple salsa”, that’s amazing and I can’t wait to try this. You did good, girl. I want to lick my screen. But I won’t. Because, um, no.
