This spicy pork noodle bowl is a quick and easy meal that will surely please the whole family! Spicy ground pork sautéed with Sichuan peppercorns swimming in a delicious broth with baby bok choy and noodles.

There is a dumpling restaurant near my house that serves the most incredible giant bowls of noodle soup. It is very delicious but, sadly, also, so very messy—at least for me. I cannot be trusted with soup, long slurpy noodles, and chopsticks.

However, luckily for me, I can make a similar version at home! And now I get to share this pork noodle bowl with you!

The dumpling restaurant uses slow-cooked beef, but I made an easy and fast soup using highly seasoned ground pork mixed with baby bok choy swimming in a tasty broth poured over cooked lo mein noodles.

This dish can be made in just 40 minutes and eaten at home, which is excellent for slurping soup.

This pork noodle bowl isn’t overly spicy, but you can tame it by not using the chili garlic sauce or the sriracha. However, I suggest adding a little of the chili garlic sauce. It adds so much delicious flavor!

Ingredients needed

  • Ground pork
  • Garlic
  • Ginger
  • Lemongrass
  • Chili garlic sauce
  • Sichuan peppercorns
  • Cumin seeds
  • Kosher salt
  • Black pepper
  • Vegetable oil
  • Chicken stock
  • Baby bok choy
  • Green onions
  • Low-sodium soy sauce
  • Fish sauce
  • Sriracha
  • Lo mein noodles

How to make pork noodles bowls

This dish is comfort food in a bowl! It’s perfect for cold winter nights or cool fall days.

  1. Mix ground pork, garlic, ginger, lemongrass, chili garlic sauce, Sichuan peppercorns, cumin seeds, kosher salt, and black pepper in a bowl.
  2. Add vegetable oil to a soup pot (I’m using a 5.5 quart Dutch oven) and cook until no longer pink. Break the meat up into tiny pieces.
  3. Add chicken stock and simmer for 10 minutes.
  4. Stir in chopped baby bok chop, green onions, soy sauce, fish sauce, and sriracha, and let simmer for 5 minutes until the bok choy is soft.
  5. Divide cooked lo mein noodles into four bowls and pour the soup over the noodles.

Recipe Tips

  • You can make this soup less spicy by cutting out the chili garlic sauce and the sriracha.
  • Swap out the ground pork with ground turkey or chicken.
  • I’m using cooked lo mein noodles, but for an easier option, you can use spaghetti or angel hair pasta.
  • If you can’t find baby bok choy, you can substitute kale, spinach, or regular bok choy.

Ingredients 

  • 1 pound ground pork
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon lemongrass paste
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon Sichuan peppercorns, crushed and chopped
  • ½ teaspoon cumin seeds, muddled
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • 1 tablespoon vegetable oil
  • 6-8 cups chicken stock
  • 4 cups thinly sliced baby bok choy
  • 4 fresh green onions, thinly sliced
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon sriracha
  • 12 ounces lo mein noodles, cooked

Instructions 

  • In a medium-sized mixing bowl add ground pork, minced garlic, ginger, lemongrass, chopped Sichuan peppercorns, red pepper flakes, muddled cumin seeds, kosher salt, and black pepper. Mix until well combined.
  • In a 5-6 quart pot (I used my Dutch oven) add vegetable oil and set over medium high heat. Once the oil is hot add in the ground pork and cook until the pork in no longer pink. Breaking up the pork while it cooks.
  • Once the pork is fully cooked add in the chicken stock and simmer for about 10 minutes to help the flavors combine.
  • After it has simmered add in the baby bok choy, sliced onions, soy sauce, fish sauce and sriracha. Simmer for another 5 minutes or just until the bok choy is slightly softened.
  • Add cooked noodles to your serving bowl and pour the hot broth mixture overtop.

  1. YUM! I never order noddle bowls out because of the mess 🙂 especially if chop sticks are involved, but I LOVE them. this is perfect. I can be as messy as I want and no one will see

  2. This looks seriously amaze balls! I’m awful at using chop sticks too, like seriously bad. If I go out and the place uses chop sticks I usually have to ask for a fork. I’ll have to eat more delicious meals like this so I can practice 😉

  4. Maybe you just need an over-sized shirt to wear when eating really messy foods, however eating broth with chop sticks is never a good idea. Stick with a spoon.
