Sometimes you make a dessert that makes you think “why in the hell did I make this?!?!” You then take pictures of said dessert and afterwords find yourself eating {almost} the whole cake. With your hands. Like a cave man.*Hangs head in shame*

What is it about cinnamon rolls that call to me like cake to a fat kid? Or maybe cinnamon rolls to a fat kid? All I know is that after I indulged I felt horribly guilty. Nothing is worse than food guilt. Anyone else experience this? This witty e-card can explain my life better than I can.

Am I right?

I also had to share this picture of my cat Nermal who felt he needed to see what in the heck was going on. Don’t worry. He didn’t eat any of the food.

So wanna know what it’s this delicious cake? Cinnamon rolls, pecans and apples. Simple, flavorful and sooooooooo good! You could be classy and serve it with a fork or silently eat it in the kitchen with your fingers. It’s your choice. I won’t judge.

Nutty Cinnamon Roll Apple Cake

Yield: 4 - 6 servings

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 60 minutes

Ingredients:

1-1/2 cups small diced apples, peeled (divided)
1 (12.5 ounce) can cinnamon rolls with icing
3/4 cup chopped pecans
2 tablespoons unsalted butter
1/3 cup packed dark brown sugar
2 tablespoons light corn syrup

Adapted slightly from Pillsbury

Directions:

Preheat oven to 350 degrees.

Spray a glass 9-inch pie plate with non-stick spray. Put 1 cup diced apples into the bottom of pan, set aside.

Open cinnamon rolls and set icing aside. Cut each cinnamon roll into quarters and add to a medium sized bowl. Add in remaining 1 cup diced apples and 3/4 cup chopped pecans.

In a small bowl add melted butter, dark brown sugar and light corn syrup. Stir until combined and add to bowl with cinnamon rolls, apples and pecans. Mix gently to combine all ingredients. The nuts will stick together a bit but try your best to keep everything evenly mixed.

Top apples in the pie plate with the cinnamon roll mixture. Try to make the top as even as possible.

Bake for about 35 minutes until the top is golden brown and the cinnamon rolls are cooked through.

Let cake rest in the pan for 5 minutes and flip over onto a plate or cake stand. Take metal lid off the icing and microwave for about 20 seconds until the icing is melted and pourable. Drizzle over the cake and devour!

      I’m sad to report I only ate two (as just two tiny cookies) this year. I had them at work and when I went to get more and they were all gone :(

    I know that feeling all too well. Every time I make a dessert I ask myself why. Then when I shove a handful of whatever it is into my face I remember… *Sigh*

    I totally have those moments…like daily. At least, daily for one very specific week out of every month.. UGH. But at least this looks so delicoiusly worth the indulgence!

    Oh my lord, this makes me wish we could get ready-made cinnamon rolls in New Zealand. So bad.

    Food guilt is the worst! It took me a really long time to shake it, and I don’t even know what made me click over into not being bothered by it, so I won’t try and just tell you to not be guilty when I don’t even have any better advice than that. All I know is that the media sends women a zillion mixed messages a day that are almost impossible to ignore, and also if I feel like eating food then I should be able to eat it and feel only happiness at the deliciousness. SIGH.

    Finally, your cat is adorable!

    Drooling over here. Christina hit the nail on the head, this is totally an apple fritter + cinnamon roll combo which for me, are the two most tempting things in any bakery. So yeah, I would’ve sat in the corner eating this with my hands if it was in my house too. No judgement. ;)

    I gave up food guilt over a year ago….and have gained 30 pounds since then. So maybe food guilt is a healthy thing. LOL! I would NOT feel guilty about going caveman on this cinnamon roll apple cake! YUM!

    I literally laughed out loud at the thin mint meme. I swear its SO easy to eat a whole sleeve. I think they make the wrapper extra flimsy on purpose so when you open it, all the cookies come flying out and there’s no sense in wasting another container to keep them in, might as well eat the sleeve. ha ha

    THIS cinnamon roll cake looks amazing. Cinnamon rolls are my fave decadent treat. And I love the cake stand!! I have my eye on one in an Etsy shop.

      I think you might be on to something about those flimsy thin mint packaging! I got my cake stand at an antique store in Ohio. I love it because it sits really low to the ground. Plus I love the ruffled edges :)

    I think everyone endures food guilt. Some more than others. It’s an evil evil thing!! Food is too wonderful not to be fully enjoyed and it should be guilt-free. This cake is absolutely, insanely tempting and there’s no way I could resist eating a gigantic hunk of it. Perhaps with my hands as you describe ;) But I would enjoy every moment of it and then get back on track with the next meal. So now, I seriously need to make this cause it’s just gorgeous!
