Most people can be categorized into one of three groups: waffle, pancake, or French toast breakfast sweet people. Now, me personally? I usually go with French toast, but not when these gingerbread waffles are on the table!

There is something so wonderfully wonderful and wintery about gingerbread—anything, especially in the morning. It’s cozy AF.

For these gingerbread waffles, I spiced up a fast batter (made simple with baking mix) with brown sugar, winter spices, and molasses. They were delicious in every single bite!

For the topping, I went with whipped cream, powdered sugar, and a little cinnamon. However, maple syrup is also a great option. I also like them topped with Cranberry Orange Sauce with Ginger.

Ingredients needed:

  • all-purpose baking mix (Bisquick)
  • brown sugar
  • cornstarch
  • warm winter spices
  • melted butter
  • milk
  • molasses
  • egg whites

FAQ’s

Whipping the egg whites helps create fluffy waffles. Just a little bit of whipping will add some extra air to the eggs.

While not necessary (especially if you have a hungry family clamoring for breakfast!), letting the batter sit does have benefits. It gives the leavening time to work, resulting in a lighter texture. Even letting the batter sit for 5 minutes will help.

Store leftovers in an airtight container in the refrigerator or freezer. To reheat, use a toaster or place it on a cookie sheet, and reheat it in the oven at a low temperature for a few minutes.

Gingerbread Waffles Recipe Tips

I used my old Sunbeam 7-inch waffle iron. It makes four waffles for me, using ¾ cups of batter per waffle. I cooked mine on medium heat for about 4 minutes. Servings and cooking time will vary based on the size of the waffle iron used and the manufacturer’s instructions.

Although not necessary, I did sift my waffle mix before using it to help create fluffy waffles and prevent significant clumping in the batter.

This recipe can easily be customized to suit personal preferences. If the gingerbread flavor isn’t strong enough, try adding more spice, ¼ teaspoon at a time to the batter. If you prefer a subtler flavor, try reducing the spices ¼ teaspoon at a time.

This recipe offers endless topping options! You can serve it with good old-fashioned maple syrup or other classics like powdered sugar or whipped cream. These waffles would also be delicious and served with fresh or spiced fruit compote.

Peaches and pears go exceptionally well with ginger or cranberries if you want a more holiday-themed breakfast.

The cornstarch in this recipe helps create a crunchier exterior.

Ingredients 

  • 2 cups all-purpose baking mix, Bisquick
  • cup brown sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 1 cup milk
  • cup molasses
  • 3 tablespoons melted butter
  • 2 large egg whites

Instructions 

  • Whisk together baking mix, brown sugar, cornstarch, and spices in a medium bowl.
  • Add milk, molasses, and melted butter to dry ingredients and gently mix until just combined.
  • In a small bowl, whisk egg whites. Whisk until frothy, about 2 minutes.
  • Gently fold in egg whites to batter. Stir until just combined. Batter will be slightly lumpy.
  • Let the batter rest for 10 minutes whole you heat your waffle iron.
  • Heat the waffle iron and once fully heated, spray with nonstick cooking spray.
  • Add about 3/4 cup of batter per waffle to the make and cook according to manufacturer instructions for the waffle iron.
  • This will make about four large 7-inch waffles.
  • Serve with maply syrup, whipped cream, or powdered sugar.
