I have always had a love hate relationship with summer. In the middle of the winter when it’s snowing and freezing cold I dream of summer. I dream of sitting outside for dinner and drinking up the warm summer air.

Then summer arrives and after about 5 minutes I’m hot, sticky and totally over the heat. I’m such a fickle lady. If every summer day was just slightly warm with no humidity I would be down. Unfortunately here in New York the humidity really likes to show up and stay until I’m at my breaking point.

So, when I’m hot and it’s summer {and I’m dreaming of winter} the only reasonable thing to do is make a cocktail. This super bubbly blueberry lime martini is the best way to drink away the summer heat.

The first time I had a martini I was utterly disgusted. To be honest I’m still not a big fan of the straight up classic martini. I guess the thought of drinking straight booze and olive juice just doesn’t really get me fired up to drink. Plus olives are gross.

Well, in my opinion anyway.

This martini has that great punch of booze without all that straight alcohol flavor. If you’re not sure if you have ever seen blueberry juice you  just probably overlooked it. I found mine hiding on the shelves near the fancy juice in glass bottles.

You know the stuff. It’s the ones that makes you think “good laaaaard I would never pay that much for juice.” Luckily you get a lot of use out of the jar and it’s still cheaper than buying a martini at a bar. I think the bottle cost me $9 but the last time I ordered a martini at a bar I paid $15.

So, by making this martini you’re actually saving money.

Sparkling Blueberry Lime Martini

Happy Monday! Who doesn't want a cocktail to start the week off? This sparkling blueberry lime martini is fresh in flavor and perfect for sipping all summer long.

Yield: 2 drinks

Prep Time: 5 minutes

Cook Time: 0 minutes

Total Time: 5 minutes

Ingredients:

2 ounces blueberry juice
1 ounce vodka
1/2-1 teaspoon Truvia sweetener (depending on juice sweetness)
3 lime wedges, divided
Sparkling sweet wine or sweet champagne, cold
Fresh blueberries

Directions:

Add a few ice cubes to a cocktail shaker and add in blueberry juice, vodka, Truvia and juice of 1 squeezed lime wedge.

Shake to combine until the shaker is cold.

Pour equal amounts of the blueberry juice mixture into 2 martini glasses.

Fill to the top with sparkling wine or champagne.

Garnish with a few fresh blueberries and lime wedges.

I tolerate summer and I'm not a fan of winter. I'm more of a Spring and Fall kinda chick. I don't like straight martinis either, although it makes me feel very Bond-esque to hold a martini glass. This blueberry lime very sounds perfect.
